  • Minute Recipe: Spanish Tomato Bread and Serrano Ham or Prosciutto.
    Pantry staples and convenience foods take the stress out of visitors popping in! Jacques Pepin begins with a handy, pre-made pizza shell for his Chorizo, Mushroom, and Cheese Pizza. With a box of pasta and can of tuna from the cupboard, he creates Orecchiette with Fennel and Tuna. Lastly, a couple of eggs combined with the pantry staples of flour and sugar are whipped up into a kid-friendly dessert: Popover with Apricot Jam.

    Thank You Jacques for all you do and have done all of your life.
    I worked as a Sous-Chef in an Italian Restaurant in SF, and one evening when I was preparing for the Dinner Crowd, I did something that annoyed the Chef. He was exasperated and told me that Jacque would never do that... I told him I knew of "Jacques Pépin and had studied some of his recipes, but that..." He interrupted me, "You've never watched him cook?" I shook my head, no. He made me promise to go to house that Saturday to do some "Homework." I went... and we spent Hours watching his old VHS Tapes of Jacques that he had recorded off of KQED. It was pretty damned awesome.

    Easy to make food by using everyday items that can be found at any supermarket. That's what makes Jacques the best TV chef. I'm so sick of the Food Network clowns who make their shows about themselves and not the food. He understands that most of us don't cook that much or at all and he simplifies the recipes to make it easy for anyone to do.

      Seth Spain yes. They need to rename it The Eating/Cooking Contest Network. PBS always had good cooking programming. I used to live near Seattle and liked The Frugal Gourmet as he was located in the region. It was unfortunate what came out about him but his show was good and I have two of his cookbooks and the are really good.

    I love Jacques Pepin. He may be a trained French gourmet chef, but he understands the American lifestyle and the need for convenience in cooking. He isn't hung up with organic foods and knows how to make elegant food with stuff out of your fridge. He's the man!!!!

      24 James Bears awards bro.... But why he didnt have things like Michelin Stars is because he never got the chance to run a professional kitchen for a long enough time. He was in a car crash that damaged one of his arms so much that he had to leave the kitchen, he reinvented himself as an educator and author and the rest is history.

    I love to cook. My first serious cookbooks were Mastering the Art of French Cooking,, Volumes I and II. The originals, not the boxed set. My family is of French origin. Everyone in my family cooks delicious creative food, although they may have degrees in subjects not related to food. I have lived in Berlin for 30 years, but before that, I lived on the French border where I got married. My new husband and I went to Alsace every other week-end, where we had some really good French friends. His accent was exactly like Jacques', the melody of French carried directly into his English, "You know..." I am "staying in" now and almost every day I talk to my sister in Minnesota, who is a professional baker. When I told her I was watching Jacques, she said, "Oh good! I'm so glad you are doing that. It's good for your spirits." Not that I'm depressed! But she is so right. I carefully record the details of his methods, and have "More Fast Food My Way" in my Amazon basket. I'm so sorry for his loss of his Gloria, who he thinks about with every deft detail, how she likes turkey wings, and likes her pasta well-done. What a terrible year! On his many shows, though, he's timeless, and clever and produces fabulous food. I have to keep reminding myself that he has a Master's Degree in French Literature from Columbia University... He has mastery at more than the one thing... He's a man of all seasons.In this time, he's a Godsend!

    I made that pizza with some friends a while back...granted, chorizo, garlic, and about a couple of pounds of cheese are hard to mess up, but it was seriously one of the best pizzas we've had. The only modification we made was upping the garlic (we take all garlic amounts in recipes as "this is just a starting point," so we probably ended up using 6-8 cloves and wanting more).

      KQED is San Francisco's public TV station. Since it serves some of the most food-obsessed viewers in the USA, it has always had a solid lineup of terrific cooks...and Jacques has been with them...seems like forever...

    So glad these epis are available, may they always be. And maybe some of today's TV chefs can watch too & take note: this chef (N.B.: he's a master of *teaching* as much as chef- ing) doesn't just pass along recipes as you do, he teaches us all *how* to cook, very subtly, so we're not even aware all we're learning as we watch. And five years from now when a crowd gets stuck at your house after a freak snowstorm hits, you'll remember as you pull out something -anything!- from your pantry to feed them that Jacques told you to forget the nonsense about serving raw pasta, cook it just *past* the moment the chewy line dissipates instead, & your shivering refugees will thank you.

    Pepin is such a treasure. An improvement on the first dish is to use Iberian ham instead of prosciutto. It’s another experience altogether. Also, paella is not made with chorizo. I understand why some people would like it but it would overwhelm the dish itself. Chorizo on a pizza, on the other hand, is a great idea.

      The knife has to be so sharp that it cuts the onion with almost the weight of the knife only.

    I learned in a restaurant kitchen, to cut peppers from the inside, never from skin side. To prevent knife from slipping. I guess his are always sharp.
