  • How to make RESTURANT STYLE soft idli, set dosa & crispy & crunchy dosa in 1 batter
    -you will stop ordering from restaurants.
    Ingredients
    -3 cups Dosa rice
    -1 cup urad dal/black gram
    -1/4 cup Sabudana
    -1tsp fenugreek seeds
    -1 tbsp soya bean (works as fermenting agent)
    -1/4 cup Poha (thin flatten rice) to use while grinding
    -Wash & rinse 2-3 times under running water (except Poha)
    -Then soak for 6-8 hours in fresh clean filter water about 4” above rice level (please check my video )
    -after 6-8 hours do not throw the soaked water, we will use the same water for grinding, this water will help to ferment
    -After 6-7 hours you will notice most of the water absorbed
    -transfer the soaked rice, dal, sabubana, soya bean into blender and use same water very little water blend to a smooth and fluffy batter (batter shouldn’t be too thick nor too watery it should have the consistency of a fluffy mix)
    -Grind in a batch
    -Transfer to a large container
    -Mix well for 5 minutes making sure the batter has combined completely
    (Traditionally use clean hands to mix)
    -Now cover & keep in warm place to ferment 8-13 hours
    -Next day you can see the batter has raised & well fermented
    -Add salt mix the batter
    -you can store this batter in any Tiffin or airtight container
    -no need to adjust batter by adding water
    CRISPY & CRUNCHY DOSA
    Heat the pan sprinkle little water, or under the running water for a second, that’s what I do
    -First in a very low flame pour the ladleful of batter on it and spread it in a circular motion very thin circle add oil or ghee or butter
    -Cover the dosa for 2-3 minutes when dosa turns golden brown, a roll.
    -Serve with Sambar, chutney, masala aloo.
    -SOFT DOSA -on very low flame, one ladle of batter on the tawa gently spread slightly (like pancake)do not spread like regular dosa. Size of the dosa will be small, add butter, sprinkle gun power, or chopped and mixed onions, tomato,coriander
    On top close the lid and cook
    -you will get amazing soft & spongy dosa
    -serve with chutney or sambar.
    TO MAKE IDLI
    -On a high flame, bring water to a boil in an idly steamer
    -pour 2-3 cups water to your inner pot and bring the water to a rolling boil.
    -Meanwhile grease your idly plates lightly. Mix the idli batter gently, Fill the molds with batter.
    -When the water begins to bubble and steam up, place the stand in the steamer. Cover and steam for exactly 10 mins on a high flame.
    -steam for 10 to 12 mins.
    -Remove the idly stand. Set aside to cool down for 2 to 3 mins. When cooled, the idli must not be wet on top.-With the help of a spoon or butter knife remove the idlis to a plate. Serve idli with a chutney or sambar
    -Enjoy!!!

    In Mumbai we can get easily dosa rice but i stay in gujarat so instead of dosa rice which rice we can use?

      Urad dal itself is nice fermenting agent but when you add little bit of soybean it ferments even better it rises three time more that’s why you have to add very little...

    Mam kayi baar 12 hrs batter rakhe to.. Vo khatta smell kerta hai..... Kya aisa hi hota hai.... Dosa bnaye usse to khatta taste kerta hai..... Yaha Punjab mein bhut jada hot weather hota hai.. To kya kum hrs k liye rakhe??????!

      Okay depending where you live for example Canada is one of the coldest countries in the world, that means you can’t make dosa off cause you can...keep the batter vessel near room heater and the batter gets fermented like the same in India. Same way Punjab temperature warmer then you need to keep for 4-5hrs... where I live I need 12 hrs...
