I always use egg white as glue. With leftover eggroll sheets, I'll roll them into a stick and deep fry- kids love that. I like putting chopped onion in the pork and shrimp mix for money bag.

Jicama would be a great substitute for water chestnut since they both have that beautiful crunch to them with a slight natural sweetness to them! Adding some oyster sauce and a dash of sesame oil to the mixture would be great too

I love to use white pepper in most asian cooking especially when it comes to pork and seafood. The only time I ever use black pepper in asian cooking is when using beef!!
