Chicken Alfredo - Quick and Easy

- '===='Quick and easy Chicken Alfredo, made on an evening where I really needed to make dinner for 12 in a jiffy! To be perfectly honest, I generally prefer tomato-based dishes, rather than cream-based - so I'd never made Chicken Alfredo before! I figured it is a creamy, comforting - and in my mine, garlicy - dish. So, with about 15 minutes to spare before being Taxi Mum, I got this Chicken Alfredo bubbling away on the stove. My version does have mushroom in it, but I didn't call it Chicken and Mushroom Alfredo, because I would have just as happily made it Chicken and Broccoli Alfredo - but we had mushrooms that needed using up, and they always suit a creamy, Dijon-infused chicken dish. I know this is a short video, but I thought it'd be nice to share a real-life, in-a-rush, make-things-up-as-I-go-along sort of kitchen adventure. So here is my Chicken Alfredo as it stands. Given it was the birth of my take on this classic dish, it will likely evolve over time. I hope this inspires you to get in the kitchen and play around with your idea of the perfect Alfredo!

Looks delish Liana! I chuckled when you were describing the recipe and said "It sounds delicious in my head" I do this all the time! When one is comfortable in the kitchen it's fun to try new things and tweak them. Do you enjoy cooking? I do when I do it. :) By the way - I guess winter is coming to Austrailia - is it warm enough to enjoy the water in winter where you are?
Well, I love creating delicious food, because then I get to eat it! And sharing a recipe with others means they get to experience first hand this same sensory delight....and it’s art that nourishes the body as well as the mind, which is so cool! So I love creating (I wouldn’t say that I love cooking in general...I often drag myself into the kitchen and think if it weren’t for having children, I’d probably order-in many nights 😆). But if I have a clean kitchen and a fridge full of meat and veggies, I do feel inspired, and I do really enjoy it! Sweets, I don’t make as often. I’ve come up with a few recipes over the years for desserts...but sweets are a little more of a science (which is fine, but I have to feel confident with my knowledge on the basic rules of the type of sweet recipe I’m making). Before having children (and when we just had toddlers, so could eat separately often), I was far more flamboyant in the kitchen. We’d eat seafood and steak often, as well as risottos and curries, and I’d make very fancy plates of food. My cooking style is currently quite ‘feed a tribe’, so I use cheaper cuts of meat, and load up on whatever veggies are going for a good price. But that in itself forces one to be creative...so that’s where this channel comes in, I suppose! Thank you for that question! In answer to your second question: Melbourne gets quite cold in Winter. The water is much too cold for swimming for many months of the year (except for those people who go swimming in any water temp as a health kick! 🥶😆). Xx

Hi, Liana....I am so glad you showed us your recipe! It’s so much healthier than mine! For my Alfredo sauce, I make a roux of butter and flour, add heavy cream, and then lots of Parmesan cheese. Then I mix it into my cooked pasta, chicken, and broccoli florets. I can hardly wait to try your version! Thank you for sharing!
