1800s Bedroll Camping, Bake English Muffins over a Campfire

  • This video is dedicated to Thomas Jefferson, the third president of the United States. He described himself as a son of nature and organized the Louisiana Purchase, which doubled the size of the nation. Jefferson commissioned the Lewis and Clark expedition of the newly acquired territory. He gave detailed instructions on how to keep field journals. This expedition and others provided critical information for the survival of American Pioneers.
This is not a re-enactment. Instead, I use modern materials when following traditional methods. I carry a spear (Cold Steel Bushman blade) that is reminiscent of the spontoon that Lewis used to kill an attacking grizzly bear. (For safety, I put a sheath on the blade). I also carry a bedroll and haversack as was common during the Civil War era. The bedroll includes, a wool blanket, extra clothing, a candle lantern and tarp. The tarp is made made from a modern fabric: Cordura (custom made by The Hidden Woodsmen), rather than canvas. My military surplus haversack contains food and other supplies.
I demonstrate a simple way to make English Muffins over a campfire. Thomas Jefferson described these muffins as “a great luxury.” I adapted the recipe from 1) the “receipt for Monticello Muffins” www.monticello.org/site/jeffe... , 2) The Food Journal of Lewis and Clark, Recipes for an Expedition by Mary Gunderson, 2003 and 3) Grandmother Kramm’s 1920s English Muffin Recipe.
Combine and dissolve: 1/4 cup starter (or 1 pkg yeast), 1 cup water, 2 tsp dry milk, 1tsp sugar, 1/2 tsp salt. Add to above 1. 5 cups flour and stir. Flour a wood plank and knead until smooth. Place in well greased bowl, cover and set aside until dough doubles (4 to 8 hours, depending on temperature). Form into 4 or 5 muffins, powder with flour and cook on ungreased pan until brown on both sides. Place on rack near cool part of fire until thoroughly baked.
Yaupon Tea tastes similar to green tea. Yaupon (Ilex vomiteria) is the only plant in North America that contains caffeine. It was used by Native Americans in purification rituals. For additional information see my video, "Ancient Beverage Promotes Purity, Peace and Friendship" • Ancient Beverage Promo... .

Every time I watch Ken, I'm reminded of how to be a better man. One who is positive (never has a mean word for anyone) , patient (to get just the right shots for the video), passionate (so many outdoor trips, so little time), and most of all a true man.

I love these traditional camping and lifestyle videos Ken! It always breaks my heart when I go to out into the woods at LBL National Recreational Area or one of the many Tennessee state parks and I find trash like that. I also carry trash bags just in case I come across someone else's stupidity. Thank you for also being a role model to others that might not initially think that way. Keep making awesome videos, because we will keep watching them.

After twelve years in Caldwell (near College Station, TX), we moved to Charlottesville, VA--home to all things Thomas Jefferson! While in Texas, I owned a lot of yaupons and never knew about that tea! My grandchildren would have been very interested in seeing that example of 'eating off the land.' This time, I found the excellent musicianship and apt tunes to be enjoyable and even ironic (packing up your cares and woes; after you've gone). The video 'ends on a high note!'

I've collected camping gear for years and was always fascinated with the cutting edge of the more recent outdoor items. But because of videos like this, especially your videos on bedrolls and haversacks, have I come to reuse my old bread bag and an old treated canvas tarp I've had for years. Unfortunately, I threw away my perfectly good Boy Scout canteen a decade ago. Cutting edge is great, but camping the old way is much more satisfying. Thanks Ken for keeping us in mind of that. Peace.

Those English muffins sure do look tasty, and with honey to-boot! It's always nice to see what people enjoyed eating in the outdoors.

Hey Ken. Cool video as usual! I really enjoy your 1800's series. You are one of my favorite CZcams channels. I have that same set of cutting boards (bamboo I think?). Anyway, I just wanted to say thanks for sharing your knowledge and time. I look forward to your next video!

I read Undaunted Courage and loved it. Last two summers I have followed the Lewis and Clark trail for vacation with my wife (she is no camper.) Still have not made it to the mouth of the Columbia but I will get there at some point. Thanks for the video.
