your video is not properly explained .. I could find Editor in my appearance.. You must have used some plugin..

Do not jump directly here it's a series tutorial! You have to follow from the part 1 if you want to understand how FSE block editor theme works. Based on your questions it seems like you are still using classic theme for this reason you do not have editor option in your Appearance tab.
