i work for almost 23years in the Meat Industry... im trying to introduce a simillar process at the plant where i work... but if management doesnt have the vision to see knife skills are extremely important present and future. Quality will be substandart and people will keep cuting their fingers
I've done some butchering . I'd sharpen my knives and clean my knife kit at home every day . I don't do it any more. But I use my knives at home the edge lasts 6 months lol . At the shop my knives edge would last a week with out having to use a stone . I enjoy sharpening more then I do butchering hahaha. This would be a cool job . It's a pretty kool/ skill to have .

not bad but he steeled on 2 different angles, lady needs to use all of steel usually their is a stamp at the bottom of steel and you don't want to hit that with your knife
angles have worked well in the past, my results on the knife sharpening tester last time 9,8 and 9.9 out of 10 last test , What was your reading Neil ?. And no need to use whole length of steel , as long as you can straighten the cutting edge with this action , stay sharp !! E J

I was taught to sharpen away from your hand, not towards it while using a steel, after 20 years in the business, this works well for me..

Its such a fun process right like sharpening your knives then just seeing how sharp it is, it was like a sport to me hahaha
