I believe if you used the actual spoon or fork, majority of the sauce would get captured onto the spoon surface and a fork would make the pasta mushy and would stick the pasta .
Because that way, you don't break the fresh pasta when mixing. Fresh pasta is less resistant than dried pasta. Also, complex shapes (such as farfalle, radiatori, spirelli, fusilli, conchiglie) are designed to hold sauce so if you use a fork or spoon for mixing, you might end up smashing or ripping them. I usually use a spatula for mixing short shapes. Just try for yourself and you'll see what works best for you.

@@user-co8hx6ff1o it’s great for chopping lots of things! Veggies and herbs and garlic etc. My elderly mom had one, too, and she found it easier to use than a knife with her arthritis
