Beautiful bread! And the mill looks very zen! Does the honey make it a bit sweet? I'd like to do a savory Amaranth bread.. possibly using some olives and herbs de provence.. something along the lines of Rajgira Atta (Bhakri?) Paratha but with yeast and a bit of flour for it to rise!
