I am a pastry chef Saba.. don’t open the oven door for the first 20 mins of baking. You can pre heat the oven for 10 mins. For better results , use an oven thermometer. Try to bake on the cooling rack tray , since dark colour trays attract more temperature. Use a skewer instead of a toothpick .. You can open the oven door directly , no need to switch it off. When the cake cracks from top , that means it needed more space or batter was over mixed. Pipe a thin layer of soft butter in a straight line on top of the batter , leaving some space on the sides of the batter for tea cakes so that the cake will tear open only from the centre where you’ve piped the butter and won’t tear from other areas. Layered cake sponges also get cracks from top, as bakers we cut that part with a thin knife. All the best.
