    小炒牛心椰菜
    材料:
    牛心椰菜一個(約一斤)
    蝦乾一兩
    粉絲一札
    冬菇6隻(已預先浸軟及去椗)
    豆腐乾3塊
    臘腸一條
    辣椒仔2隻
    蒜蓉一湯匙
    處理:
    1. 椰菜,撕開/切開一塊塊,清水浸3分鐘,清水沖洗乾淨,擎乾水。
    2. 豆腐乾,切幼條。
    3. 冬菇,切絲。
    4. 臘腸,打斜切片。
    5. 辣椒仔,去椗,去籽,切碎。
    6. 粉絲,清水浸軟及剪碎。
    烹調:
    1. 大火在鑊內燒熱油一湯匙。
    2. 加入冬菇、蝦乾、豆腐乾及臘腸,爆香。
    3. 轉中慢火,加入蒜蓉,炒勻。
    4. 加入椰菜,轉大火,炒勻,可視乎情況加入適量水分。
    5. 轉慢火。
    6. 加入調味料:
    a. 魚露半湯匙
    b. 生抽半湯匙
    c. 糖半湯匙
    炒勻,轉中火,冚蓋焗一分鐘。
    7. 椰菜已焗至軟身,在菜的中間加入粉絲,轉大火,炒勻至收汁。
    8. 完成,上碟,灑上辣椒粒。
    9. 可享用。
    Stir frying cabbage sugar loaf with dried seafood and vegetables
    Ingredients:
    Cabbage sugar loaf 1 No. (About 1 catty)
    Dried sea prawns 1 tael
    Vermicelli 1 No.
    Mushrooms 6 Nos. (already soaked and anchors removed)
    Dried beancurd 3 Nos.
    Chinese sausage 1 No.
    Chili 2 Nos.
    Garlic sauce 1 tbsp
    Preparation:
    1. The cabbage, tear it slice by slice. Soak in tap water for 3 minutes. Rinse with tap water. Drain.
    2. Dried beancurd, get it shredded.
    3. Mushrooms, thinly shred.
    4. The sausage, slantly slice.
    5. Chili, cut the anchors. Remove seeds. Chop well.
    6. The vermicelli, soak in tap water until it turns soft and cut well.
    Steps:
    1. Heat up 1 tbsp of oil at high flame in wok.
    2. Add in mushrooms, dried sea prawns, dried beancurd and Chinese sausage, fry well.
    3. Turn to medium-low flame , add in garlics, fry well.
    4. Add in the cabbage, turn to high flame. Fry well. Add in appropriate amount of water if necessary.
    5. Turn to low flame.
    6. Add seasoning:
    a. Fish sauce 0.5 tbsp
    b. Light soya sauce 0.5 tbsp
    c. Sugar 0.5 tbsp
    Fry well. Turn to medium flame. Cover up the wok and leave for a minute.
    7. The cabbage has been turned soft, put the vermicelli at the middle of the vegetables. Turn to high flame. Fry well until the sauce becomes thick.
    8. Complete. Put on plate. Put chili cubes on top.
    9. Serve.
