    Ingredients: Chickpea Flour Omelette (makes 2)
    ½ cup (46 g) besan flour (or chickpea/garbanzo/gram flour)
    2 tbsp nutritional yeast
    ¼ tsp salt
    ¼ tsp kala namak (black salt for eggy flavour)
    ¼ tsp garlic powder
    ⅛ tsp black pepper
    ⅔ cup (162 ml) soy milk (can use water but plant milk provides a fuller taste)
    ½ - 1 cup sautéed vegetables of choice (can use raw if preferred)*
    ¼ cup vegan queso (or vegan cheese of choice), optional

    Hey Kathryn, Happy Happy Birthday🥂🍾☀️ We are enjoying a glorious Bank Holiday Weekend, here in the UK 🇬🇧 Love this simple recipe and been meaning to cover this myself but hesitant now that I’ve seen your totally awesome and engaging video. Incredible to see how your videos have improved, this can’t get any better. Really enjoy the tasting session! Can obviously see who has been the leading Vegan! Strangest vegan omelette I’ve covered is an ancient Ethiopian pancake made from fermented teff flour! Super healthy. Look forward to the vegan cheese sauce. Ketchup was my childhood option but not it’s Sriracha or fermented chilli sauce 🌶️ Keep up tremendous work. James

      Ah yes that sounds like a matured palette for sure! Those would be much more delicious 🤣 I’m so glad you’re liking the videos and you should definitely do one on this! I’ve had injera the Ethiopian teff bread only once. I loved it back then (years ago) so I’m sure I would appreciate it so much more now and really enjoy the fermented flavour. I’ve never looked into making it (I wonder if it’s as much of a process as sourdough). Any recipes for it in your fermentation books?

      Thank you for the birthday wishes William! 🥰 I’ve been meaning to take my falafel recipe and turn it into a burger patty actually! I hadn’t thought of using chickpea flour for one but maybe mixed with mashed chickpeas that could work. Thanks for the idea. Our local spot has a quinoa black bean patty and a broccoli white bean option but yup… it’s a $25 meal for sure 😳

      In 2019 that same 6" chickpea patty burger was $7.50 US. Around four years on it's nearly doubled. I've driven through most of the US and Canada and I am sure there is no chickpea Shortage. I'm annoyed eating right has become so expensive and you can forget about totally organic produce. Making it at home ourselves is our last refuge.

      It is really hard right now. Food, housing, it’s all pretty unbelievable. I’ve stuck to buying dried chickpeas and cooking them myself. Definitely less convenience options the way prices have been the last few years.

      @@blofeld39 most people are feeling the crunch I think but we’re fortunate that we’re never struggling too badly. Some plans just have to be pushed back or rethought you know. I’m glad some of these recipes we put out help inspire others to cook from home and hopefully help with the cost of food a bit!

      Ya we’ll have a whole video on that next week. You’ll have to let me know if you prefer a “cheese” sauce made from more whole foods (carrots, sweet potato etc)… I can work on getting a veg centred cheeze recipe together 👍🏼

      @@jackiesibblis3793 sounds good. I’ll work on a more whole food version. I have turned leftover tofu or beans into cheesy sauces. I find they tend to be a little more thick but I’ll experiment with the consistency and try to get a nice one out

    "Hey, loved your vegan omelette recipe using gram flour! Have you ever tried Pesarattu? It's a traditional dish from Andra Pradesh, India, made with green gram lentils and spices. It has a texture and taste remarkably similar to an omelette, even without eggs! here's the recipie
    "Firstly, rinse ½ cup of whole moong beans (green gram lentils) and 2 tablespoons of rice a couple of times in water.
    Then soak the moong beans and rice for 4 to 6 hours or overnight in a bowl with enough water to cover.
    Drain all the water. In a blender or food processor, add the moong beans and rice after draining all the water. You can even rinse the moong beans and rice before grinding.
    Add the herbs and spices listed below :
    1 green chilli (chopped) or ½ to 1 teaspoon, chopped
    2 tablespoons of chopped coriander leaves
    1 inch of ginger (peeled and chopped)
    ½ teaspoon of cumin seeds
    1 pinch of asafoetida (optional)
    salt as per taste
    ⅓ to ½ cup water
    Now grind or blend to a smooth and fine batter. The batter consistency should be similar to that of a regular Dosa Batter or a French-style crepe.
    Tip 1: If the batter looks thick, then add 1 to 2 tablespoons more water.
    Tip 2: If the batter looks thin, then add 1 to 2 tablespoons of rice flour, one tablespoon at a time. You can even add gram flour (besan).
    now on a preheated cast-iron tava, make dosa like crepes, sprinkle some chopped onions on top for crunch and flavour and cook both sides on medium high heat with some drizzle of oil or ghee on sides and enjoy with coconut chutney.

It’s a Canadian brand so if you’re outside Canada hopefully you can find it. I have their “one pot” a big sauté pan as well and I use them every day and have really liked them 👍🏼

    That looks absolutely delectable! :-D I wonder what you could possibly substitute ham with in a vegan omelette -- what to you sounds the best fit, flavour or mouthfeel-wise? My mind keeps going to jackfruit, but I've honestly no idea -- I feel like you'd have a better idea of what would pair best.
    Are those orange slices or some other sort of citrus fruit next to the omelette? :-) I've never thought to have it with that -- always been more of a "just-the-omelette" fella, myself, no frills, really (it would take a while for me to do frills), but I LOVE a good frill when done well! I just hope this week wasn't a bit too busy full of video prep -- and I hope Bryan enjoyed his omelette in the other room. ;-)

      hahaha he got over it and ate with me in the end 😜 They were orange slices! I'm a sucker for a little something sweet even with a savoury breakfast so I love having a bit of fruit on the side. Jackfruit sounds like a great sub for ham! It might need a bit more prep than something like smoked tofu though which would be pretty close to ham straight out of the package. Have you ever tried smoked tofu??

      By the way, when the omelette does get a bit cold, from all the filming and everything, what do you prefer to warm it back up? Or are you okay with it being as is? :-)

      @@blofeld39 ya we’re usually too tired at the end of filming a video to warm anything back up and we just eat it cold 😅 we don’t have a microwave so I usually just heat things like this back up on the stovetop in a pan. And we usually have oranges on hand. Oranges, apples, and bananas are pretty consistently in our kitchen. Berries (as you know) really fluctuate in cost here so we tend to have them frozen except in the summer.

    Easy tasty quick. All good. But let’s not call it an omelette. It is not eggs, it doesn’t taste of eggs, I don’t want it to taste of eggs. I want a fluffy savoury spicy delicious healthy chick pea flour based pancake. This is for vegans vegetarians and omnivores open to trying something that isn’t made from eggs. You are not going to fool someone a mea5 eating anti vegan, and also it doesn’t help a less culinary inclined vegan either if you keep reminding them of a food they are trying to avoid.

      I’m glad you like the recipe and thank you for your feedback. Calling these vegan alternatives by an animal based dish they can replicate is mostly to make it searchable on the web. I found it helpful when I was transitioning to a plant based diet to search for replacements to the things I was used to eating by calling them “vegan omelette” etc. This particular recipe is a little bit different because chickpea pancakes exist as a food item on their own in many cultures but typically if I title a recipe “blended tofu pasta” instead of “vegan Alfredo” google and CZcams don’t recognize the title as search terms and won’t impress the recipe. I completely understand your points and this thinking is actually how we started titling our videos and recipes when we began TTT. Unfortunately, they weren’t being shown to anyone until we started making comparisons to popular animal based foods.
