In some places you play louder in other quieter.

It is because when you don't play a song/ remember it perfectly , you play quieter some parts you're uncertain , just in case you need to hear yourself and the track and correct it quicker , obviously you're in front of an audience , and minor mistakes are regarded better than major ones playing over confidently and being hard on the strings and hitting wrong notes because that's also not something he plays all the time :D
