According to Historical primary source, the fragments we have from Papias, who was a late first century student of John the Apostle or at least to quote Eusebius (4th century Historian of Church History) "a hearer of John", who said that Matthew wrote his gospel in Hebrew for his fellow Jews. Notice many OT prophecies referenced much more than Mark for instance. And Eusebius records in his Church History that "everyone translated it as best they could". This is likely why we have some variations in the transliteration of the Hebrew into Greek for names and quotes being transliterated as well.
Furthermore, according to Eusebius, John Mark followed Peter around and wrote down much of what Peter said. And that is the Gospel According to Mark.
