I also suffer from the same affliction and simply can't get enough of it. If I had lots of money and time I would spend the rest of my life visiting like minded people and their farms. Well done to you and my only advice to you is perhaps a more mixed cover with winter hardy legumes would be more beneficial to your soil and the sheep would be happier for it.
