Experimenting With The Krocks: Almond Butter Edition (One Ingredient Vitamix Recipe)

  • We've been wanting to make our own almond butter for a while, so we decided to test it out on camera! Read our blog post for more info, photos & links to products used in this video: bit.ly/KrockAlmond
    When we bought a Vitamix last year, I was really excited to try making my own nut butters at home. We usually buy raw, unsalted almonds, so I was hoping to just dump the entire 16oz bag into my Vitamix and blend! However… I started looking up recipes online, and I realized it wasn’t quite THAT simple if you are wanting to use raw almonds.
    From what I read, if you try to blend together JUST the raw almonds, it will form more of a paste than a butter. In order to get a smooth, creamy butter, you either have to add a bit of oil OR roast the almonds to help release some of the natural oil in the nuts. That oil helps everything blend together nicely. Since we avoid any added oils, we decided to give them a quick roast. Watch to see how it worked out!

      I think the person who sold me my Vitamix said that you can ruin your container if you don't use a separate dry container is why I ask. I bought it thinking I would make nut butters, but I ended up using Whole Foods grind it into a container peanut butter. It is more solid. Closer to a paste than Trader Joes.

    In the Vitamix cookbook that came with my Vitamix it say's to add tahini to the almonds when making it. Just discovered your channel, and we love your videos, keep up the great work.✌️

    I started making homemade nut butters last year. I've made raw almond butter and yes it over-heats my Vitamix. I let the motor cool down then I blend until it gets as smooth (as it can). I've roasted my almonds and I got the same results as you guys. It is so much better made at home than the store bought nut butters. My husband was convinced if we bought a food processor we could get it smoother (and less thick). So last Christmas, he bought me the Breville (around $500 I think) and it did a comparable job to the Vitamix. I've also made peanut butter, cashew butter, and hazelnut butters in the Vitamix and Breville. I've tried adding a pinch of salt--and let me tell you don't do it, it is so yummy you will eat way too much, lol :) Once I added some oil and it really didn't get much smoother and I didn't like it any better, so I never add oil .
    My conclusion on making nut butters: I don't think I can achieve the same result as store bought simply because the motor in the Vitamix or Breville aren't powerful enough. I would like to purchase some of the accessory pieces for the Vitamix; which are the smaller cup sized (8 oz, I think) or the smaller carafe (mini version of the 64 oz) and try those for making nut butters and for other small jobs like dressings or dips. I think if I could get more contact with the nuts to blades they might blend more and get smoother. But either way, I enjoy making homemade nut butters and I enjoy eating them even more. I prefer homemade because I can control how much, if any, salt. Another reason, you mentioned as well, homemade is cheaper--for me I can buy almond butter for $8.99 a jar or I can make it for $4.99; I am known to be thrifty.
    p.s. If you are members at Costco, you should try their Mixed Nut and Seed butter. It is yummy. It has almonds, cashews, chia seeds, flax seeds, and pumpkin seeds and it is SOS-free. I haven't tried making it at home yet but I will. Another store might have something similar to the Mixed Nut and Seeds, I am not sure.

    BE SUPER CAREFUL GUYS!!! You have done so amazing with your weight loss. I tried going plant based and after a year never lost a pound. I later learned the problem was I was using too many nuts, making too many things with dates, using too many avocados. Making too many waffles with oat flour or almond flour will still keep a person FAT! Those super tasty treats are still calorie laden. The reason the plant based /no added sugar / no added oil works is it results in an overall lower calorie consumption....EAT VEGGIES... don't get caught in too many treats.

    I always thought the purchased almond butter was too runny anyway. Yours looks more like the consistency of peanut butter - which I prefer.

    I love you two and I'm happy i came across your channel. I was sad at first when you two were wrapping up the video and that there wasn't a price comparison but then there was :) Another youtuber i enjoy watching once said in a vlog something about making/being the content you want to see, and how that's what makes quality content, and i think you guys do that. The editing, presentation, and small things like price comparisons that viewers want to know. I really relate to jessica as well and i love how thorough she is and the talk of spreadsheets and stuff in other videos. You two have great chemistry as well and it's nice to see. I haven't been watching you two for more than 2 weeks but you're already one of my favorite channels ❤

      Oh you know I had to do the math! I actually left Trader Joe's after buying the almond butter, started driving away, and then went back inside to take the photos of the products on the shelves for the price comparison LOL. I was disappointed I didn't have to come up with a fancy equation since they were both 16oz LOL. Thank you so much for these kinds words, it makes me so happy to know that you enjoy it!     Apparently using a food processor is better if you don't want the almond butter to heat up. Possibly blend and let it cool down and repeat until smooth might be a way to make it as raw as possible. We used to make nut butter in a hand cranked flour grinder, it was good exercise. Getting the nuts chopped up well before putting them in the blender probably helps to lessen the strain on the motor.

    Ello Krocks! I've tried high-speed blenders and food processors with varying results. They were dependent on the fat content of the nuts or seeds being ground and the time I let the machine (sometimes pausing and waiting to let the machine cool down) run. The most success I've had was using a Champion Juicer. Running it through with the "blank" accessory rather than the screen. Smooth and creamy. Oooh la la. It is a sticky, finger-licking chore to clean up so when we made nut or seed butters we'd make lots. Single flavors like almond, sunflower seed, pecan, pumpkin seed, pistachio, pignoli... and then combos of nuts and seeds. Then we'd get super creative and add things like raisins, pitted dates, cinnamon, ginger, cacao nibs, et cetera... to the grind along with nuts and/or seeds. Sometimes we'd simply run a jug of organic mixed nuts through for a nut parade. A fellow chef got a stone nut-grinder and THAT was the only thing I've ever seen/experienced that would create that dreamy, liquidy, raw nut butter. He'd fill it and let it run (and make a friggin' racket) in his garage. The longer it ran the more liquidy it got. He experimented with running batches for 24-48 hours. Turned nuts or seeds into raw liquid gold. In the name of science we were always willing subjects to taste test.

    I just started making my own almond butter a few weeks ago. The key to making almond butter is to mix it a lot longer. I do it in my food processor and mix for 7 to 8 mins. It may be a lot less in your Vitamix. However, the longer you to it the natural oils in the almonds release and make the almond butter creamer. I mixed it for that long, stopped and scrapped down the side every few minutes. I also roasted them for 15 minutes and only let them cool 5-6 hours. So, the texture and taste of your almond butter will depend on the roasting time, length of time mixed and the amount of time the almonds cool from my experience. It is definitely a fun treat to make that I use to dip my apples in. You can also as a special treat add 100% maple syrup. Have fun experimenting!!

    yeah, we just tested this for the second time in two days and it's more like a 5-minute thing. but at five minutes, it's creamy (not pasty) and very much worth it!

    Try this for Raw Almond Butter..Start with 1lb of almonds, put those in your Vitamix. Since they are raw and you haven't heated them, the oils haven't been released in them, yet..So the blending process, will be a little bit longer. The first 5 to 8 minutes, the almonds will flour and start to Bind into balls. Between 9 and 13 minutes, they'll start to Clump together. Between 13 -15 minutes, They'll start to heat up and release their oils, 22 -25 minutes of blending will give you perfect all natural 1ingrediant, Raw Almond Butter...     If you do end up freezing any nut butter I'd suggest placing a piece of parchment paper over the butter and a paper towel on top of that to avoid condensation from forming on the spread. Cheers!

    Way to go!👏🏻👍🏻 I make my almond butter in my food processor and stop it once or twice in the process to scrape down and rest the machine. It can take upwards of 10-15 minutes to get that runny texture your looking for so maybe run the Vitamix longer next time. It makes a difference. I soak and dehydrate my almonds before using them.
    When I buy almond butter I buy the organic raw almond butter and the price difference is pretty significant...less expensive to make my own.

    I have not made the almond butter yet, but I have made raw tahini (in a food processor), and that too gets very hot. What I do is when it gets hot to my touch I turn it off and wait 30 minutes before turning it on again. I can take a few hours, but it so worth it! I have a Blendtec "Twister Jar" (which they are not selling right now) that can do what the tamper does on a Vitamix, so my plan is to first soak the almonds about 12 hours (to make it easy to pop off the skins) and by then they are also beginning to sprout. Then I will dehydrate the almonds (in my dehydrator, but people can use an oven at 120 degrees F). Once they are clearly dry, I will put the almonds in the Twister Jar, and blend at highest speed until hot, as with the tahini, coming back later when it has cooled (which may take more than 30 min; that's just a guesstimate). In this way one gets the best of all worlds: the almonds are still raw, the toxic and bitter peels are eliminated and by waiting for it to cool each time you can buy time to blend until it is as liquidy as you like pretty much. Oh, and it is way cheaper than store bought. I may also try putting the twister jar, with lid, in the fridge each time to help it cool down!

    I love to add cinnamon to my nut butters. I think it just gives it a nice flavor. Also I have added cocoa for a nutella like one w9th a few dates. Kids love it

    I tried making almond butter in my vitamix and wound up with almond meal. Its tasty on toast but maybe I lost heart too soon. It just seemed like I left the blender running a long time and never achieved butter..
    I have a theory that nut butter manufacturers have found some legal loophole allowing them to add oil without reporting it. When I grind peanut or almond butter in the machines at wfm I can leave the container in the fridge for weeks with no oil separating out. But we all know how much oil sits on top of our commercial nut butter jars.
    I enjoy your videos, please keep making them.

    Vitamix makes a stainless steel container, which gives me gooey, warm peanut butter whenever I make peanut butter. However, I usually have to warm up the peanuts in the oven for 15 minutes at 200°F, since room temperature peanuts overheat the motor, forcing the blender to need to cool down. If you want raw almond butter without having to add oil, I would lightly toast/warm your almonds in the oven, as opposed to straight up roasting them, if you want to keep that raw flavor. Additionally, I would suggest soaking your almonds overnight for 8-12 hours to wash as much phytic acid off as possible, also to soften the almonds to get a creamier consistency almond butter.

    Roasting really isn't necessary. A food processor will do a great job as well, although I love my vitamix. Just not willing to chance the motor. It's too precious. Lol.
    The heat from processing will "cook" raw almonds to a point, but you can still use them. "Raw" labels don't mean much anyway because there's no standard. You'd have to specifically ask the company how they grind them.
    As far as paste consistency, you just need to keep blending. As it heats up (mildly, not as hot as roasting) it'll get more smooth (because the fats release), and will become more runny-even if not quite so much as some store bought (sometimes they have access to almonds with a higher fat content so that's something to remember). It'll definitely be more spreadable after processing longer. The internet likes to overcomplicate nut butters by recommending oils and water, etc. Gross. If you have a decent food processor just until it becomes creamy. That simple. Depending on the nut or seed and quality of machine can be from 5-15ish.

      This made me think about tahini. I don't use that much of it and end up worrying the jar will go rancid before I use it up, and making small amounts of tahini might be a really good option.

      I have made sunflower butter beside sunflower seeds are so cheap for me. I do have to roast them first. I can make it for about $1 per cup.

    I roast my almonds 15 mins on 200. I use food processor for 10 mins on 10 mins rest. another 10 mins give it tht creami texture.

    The taste also depends on the quality of the almond... i order mine, raw unpasteurized from CA. (Bremmer roadside farm) The best time to buy is early fall-winter. You two did great! I always add a (tiny) bit of salt to help the flavor. And I soak them for 8 hours and then dehydrate on a heat less that 118. It activates the enzymes and adds to the health benefits. (at least that is what I have been told!)

    I have never made almond butter but I do make homemade peanut butter. It is nothing like the store (even organic). It is so yummy. My grown up son absolutely loves it. I make two jars at a time and store it in the frig.

    I haven't quite mastered the making of oil free almond butter, but I've learned the toasting a little better. I like to chop all my nuts (I have a nut mill chopper thingy), but at least cut one nut in half so you can watch the white as it browns. With the brown skins this is hard to see. As soon as you see ANY color change, take them out of the oven, because they will continue to cook. 😁 Love your videos, and your weight loss adventure is an inspiration!     You know, I wasn't going to watch this because I don't have a vitamix and don't use much almond butter but I saw Oliver in the thumbnail!! :) Oh... story, had a friend that used to LOVE her peanut butter (had her own, do not touch - jar), well her 3 young girls would often open their "mother's" jar and let their family dog lick out of it to watch his "pb look". Those girls did NOT tell their mom until they had all left home. Their mother has never forgiven them

    New to your channel...have been watching several videos today, and love how you just simply share what works for you, but you don’t act like you are an expert, don’t shove your way of eating down anyone’s throat, and that you are honest about your mistakes....basically you are real. I have been eating a mostly whole food plant based diet.....mainly started tracking my sodium to get off blood pressure meds because of side effects...well...let’s just say, when you only allow yourself 1500 mg of sodium (from food, not adding any)...it cuts out sooooo many bad foods. Nothing processed, almost no bread, no deli meats, no canned food, for the most part...so much sodium. So basically, I eat food the way it was grown; plain, and not much added to it. I lost 50 pounds this way. I do eat some fish, and fresh chicken breast (limited) i’m kind of a plain eater anyway and don’t need a huge variety of food to be happy..... I look forward to trying some of your recipes that you have shared....I love potatoes, but have no desire to eat them for a solid 2 weeks though. I don’t know how you did it....lol

    You definitely need to Roast the nuts first in the oven. Check out Downshiftology’s video. Literally one minute in the VitaMix after roasting for 10- 15mins (depending on oven temps) at 350. It’s heavenly!
    You typically need to use 3-4 cups of almonds. (Downshiftology says but I forget) if you use too few or too many cups, the Vitamix won’t like it. You can also use your food processor. Add some cacao powder to it for a chocolate almond butter. Yum.
    Homemade is the best.
    I have never been able to make it without roasting because the heating process helps the almonds release their natural oils. Buy your almonds at Costco or a co-op. Cheaper to make your own.
    You can and should freeze nuts you don’t use as nuts will go rancid.

      It really was way better than the Trader Joe's almond butter! 😀 Also, while making this video I thought of a different recipes I can create in the future. Needless to say, there will be more experimentation videos in the future. 😀

    Okay also wanted to comment bc this may help or it might cause more confusion! Haha sorry. Okay so I’m the alkaline world that I tap into on different blogs, I hear that roasting, toasting nuts it’s ideal bc it allows certain nutrients to come alive and therefore is digested as alkaline. But of course in oil free diets this isn’t even mentioned. Sometimes I find things like this that seem to suit me better anyways, so I wouldn’t bang yourself up for roasting it. I think you guys did exactly what you needed to do! One last thing I also follow another CZcams couple, “oh no I’m cheating on you!” But they mentioned that instead of adding oils they just use the natural oils, like smashing an avocado or banana in baked goods, and etc. so once again I don’t think you guys should be too strict, especially bc it’s not just about weight loss. These nut oils have essential fatty acids that we probably need and are just nutritious. Nuts are nutritious! Haha okay sorry for the nut pun. :)

    Woke up this morning thinking ooh there should be a new video from the Krocks yesterday! Yippee! Think I'll buy some nuts later to try roasting and blending. I've done it before and used a local rapeseed oil. The same type I dropped on the floor when we're on holiday a couple of years ago and a litre of oil and glass shattered all over 😂 oops.

    I've never made it, but I would soak overnight and then roast. You could try it without roasting too.

    I have made small batches of blended nuts in a coffee grinder. I will sometimes soak the nuts in water first, it seems to soften them and make grinding of the nuts faster and a little smoother.

    I have been eating a lot more of potatoes. Recently, I simply put a little salt and pepper on my potato plus NUTRITIONAL YEAST. This was really good. The Nutritional Yeast taste like you have put cheese on your potato.

    A touch of hot water while blending will help with texture. Also, will last longer in the fridge nuts stay fresher longer because of oil. Peace

    I've made both almond- and coconut butter in my food processor. After several minutes of dispair, it did turn out great!

      And oh yeah, I roasted my almonds first as well (but not the coconut flakes) because that's what my research told me to do. I didn't want to overheat the motor in my brand new food processor with having it grind almonds for longer than necessary.

    I make mine from raw almonds. I freeze them first. It doesn’t heat up as quickly and you can blend a bit longer before the mix gets too hot.

    Put raw almonds in a food processor (even better if you add in some cashews, or other nuts that have a higher fat) for 10 minutes and you will have glossy, smooth almond butter without anything else added. It WILL end up runny like the Trader Joe's almond butter. If you add in anything else, it will seize up and no longer be smooth and creamy. At minute 6 it is smooth, but the glossiness comes at 10 minutes. AND you can refrigerate it and it will not separate or become solid...it will remain nice for dipping into easily.

      I´m guessing it´d be like cashew cream and without an emulsifier I´d expect it to separate if you let it stand for a couple of hours.

      I've done it to make almond milk (3 heaping spoons of almonds soaked overnight, 2 C of water 3 dates).
      The same recipe is good to make cashew milk. I got it from Plant based Gabriel.

    A what, Mr. Brian??? Awww give the doggie some - he is sooo sweet and patient. I have eaten off the spoon with my doggie. He is my baby, so I don't care. Kiss the doggies for me! I make everything else, I really won't be making almond butter. Thank you for sharing how though. Maybe I will try one day!!

    My favorite is from the grinding machine at Whole Foods. Homemade is surely cheaper but probably similar. I made hazelnut butter a few years ago but you’re supposed to peel the nuts first and it was not at all as easy as the directions made it sound. I added cinnamon and a little maple syrup 😋 I also gave most of it away!

    I think they add raw oil to the traders Joe’s one , with out listing it .. ( because it like using almonds ) .
    They legally adding natural flavors to all of the commercial Orange juice 🥤 ( and others ) with out listings it on the label .
    I try to make peanut butter at home and will continue doing that ( it taste amazing ). But come a little more on the paste-cream side then liquid-cream .
    You can always add a little water to the blander and salt ..
    the flavor will be great and you can control how much liquid you want the butter to be ..

    I add a little almond milk or soy milk with the almonds in the Vitamix. Much easier to blend, cuts down the fat and super creamy and spreadable. Sometimes I add a couple of dates too. The Trader's Joe almond butter looks watered down to me. There is no way you can end up with almond butter that runny if you make it with just almonds.

    I haven't tried to make almond butter, but have made peanut butter. I use my food processor, even though I have a Blendtec and a Vitamix. I've gotten really smooth peanut butter, but I think it may take as long as 5 minutes to get to the consistency that you want. And I think they'll stay fresh enough stored in the fridge.

    Thanks for doing this video. I had bought a pound of almonds with the intention of making almond butter in my food processor, but people kept eating the almonds for snacks! Note: it was me.Thanks for the heads up about the roasting. I googled non-Newtonian. Had to. Now I know.

    Add a teaspoon of warm water to the almonds once blended and keep adding a teaspoon at a time until the desired consistency has been reached, not too much though.

    I tried this a couple of weeks ago and yours came out much better than mine did. Mine didn't blend very well and like yourselves I was terrified of burning out my Vitamix! However, I still ate it and loved the taste just not the texture, it was a bit lumpy. I'm going to try again tomorrow and I think I'll roast them a little longer and maybe try blending longer too, maybe rest the Vitamix between blends just to be safe? I can make peanut butter really easily and it always comes out good.

    You should look into Indian markets for items like almonds, spices, rice and beans. It's a real money saver.

    I bought Aldi's almond butter but I buy from Dillon's but they are roasted & it is pulverized in the machine there. I like it cause i like chunky especially in my chocolate oil free cake. I tried both but to get small pieces of almond in the cake made it 100% better

    I use raw almonds but I use a food processor. Nothing added to it. It takes about 8-10 minutes. I stop it several times to scrape the sides down and to make sure it doesn’t get too hot.

    I have a not almond butter related question😅
    I’ve been searching a lot about the potato cleanse lately and from the medical point of view would nothing speak against the 2-week-cleanse.
    Unfortunately I can only get one week of vacation (from my office job) in the next time and would like to ask you, if you felt ‚weaker‘ or less energetic at the beginning of the two weeks or more towards the end of the potato cleanse :D
    So would you rather recommend to start it in the free week and than work the second week or to start with the work week and put the vacation on the second week ? :D 🙈

      I did a week on potatoes. I felt a normal amount of energy. To contrast, I fasted on water only for 8 days. I worked my office job during that time. I decided to start eating after 8 days because I had very very low energy, and it wan't fun anymore.

      Hallo Sabrina, guten Abend aus Berlin!
      And that's about as far as my German will take me. I did a week of potatoes (I guess the potato cleanse) and felt absolutely fine in that one week. I was pretty annoyed on Day 7 but that's because I *wanted* to eat my potatoes, I just couldn't without gagging!!!
      I think Brian and Jessica said much the same; they were annoyed, cranky, but kept each other strong and on track. I can't say if they felt weaker or less energetic, but I was perfectly able to keep up with my son for the entire week. I'm enjoying Elternzeit at the moment, while my wife works full-time. Hope this helps :)

    I use raw almonds in the Vitamix until it reaches the paste stage. Then I use my food processor to get a more spreadable product. It's not runny at all.

    i refrigerate all of my nut butters and they last for months. i'm pretty sure you can freeze it.
    i'm going to toss some frozen almonds i have into my 30+ year old blender and see if i can get almond butter without roasting or defrosting them... frozen almonds are better to make almond milk from because freezing swells the water molecules and bursts the cell walls making my old blender enough to make a great smooth almond cream without having to strain it, so lets see what it does for almond butter. hmmm...

      teribabe58 My husband and I have been on the 6 week plan for 2 weeks and love it. I’ve lost 13 lbs. It’s very easy and less cooking , but More chopping but we love our huge salads. You’ll love it too. Hunger and cravings disappear.

    I saw youtube video making almond milk out of almond butter. Might not look so pretty with the almond skins, but probably would work nicely when using it to cook with.

    I got a Vitamix V1200 for Christmas and almond butter was one of the first things I tried. I roasted my raw almonds for 10 minutes and let them completely cool before blending them. Mine turned out nice and creamy but I blended for longer than you guys (about 5-6 minutes). It was not as runny as the Trader Joe’s but definitely not pasty like yours, so I’m thinking you could have just blended a bit longer to get a creamier texture? I used the tamper pretty much continually while blending.

    I would try this in a food processor if you have one. I think the physics or something is better. Also, just run it for a long time and it'll get creamier. The few times I've made homemade almond butter, I've run my processor for like 10 min and that generally works (I really like a super runny butter). I don't have a top-notch blender either! It's gonna be hot in there, but the butter will be smooth. To be honest, I think I'd rather just purchase almond butter and make peanut/sunflower/cashew butter since they're easier to blend.

    Going to Earthfare and using the machine and doing it myself‼️😁it is very good... and I can drive how much I want in the little cup...I had sent you guys a comment asking about the buns that you ate with your carrot hotdogs and also if you knew of a healthy tortilla ...could you give me some insight on that or just some grain ones of both of those because I’m really trying to eat better mostly here lately...

    I think it may need to blend more even though it looks good how you did it. I made some in a food processor which actually almost ruined it but I had to let it run for many minutes, definitely more than 3 minutes. I'd try letting it run for 5-6 minutes. Almond butter will stay good for a very long time, I'd put it in the fridge.

    Even the Trader Joe's raw almond butter is not really raw in my opinion. I buy it too and love it. I do think you need to brown them a bit more to get the smooth and creamy consistency. I like to roast mine at 325 or 350 for a bit longer. Also, start your nuts from room temperature. If they were frozen before you started, it will make a difference. Hugs!!

    Hey guys I’m a new subscriber to your channel. I like your realness so I subscribed. I have made almond butter in my Vitamix too but the consistency is a bit off for me...there are nut butter grinders out there to make your own nut butters. I think the last time I checked, they are a bit expensive...I know you like your appliances as I do so maybe you should check it out...I passed on it as making nut butter can be a bit dangerous for me...no restraint sometimes ...thanks for the video

    You need double the nuts, just keep it running and it will go creamy, here in the UK lidl or aldi 200g bag of almonds £1.99, and 100% jar almond butter 170g £1.99 same store, 200g of nuts to make 170g butter, we used the same jars so we new the amount, 8 minutes in oven and straight in the blender, pulse until powder and run on full till it gets like cream, tkes like over 15 minutes to blend no salt no oil,,,

    I remember vita mix saying something about the size of the base of the container makes a difference when making things like not butters.… They have containers with different circumference sizes.
