How TF are you not getting pad Earlies on those centers though? Wait...just realized you have older gen pads. Gonna guess that has something to do with it since older pads have load cells in them rather than FSRs. Lucky. These FSRs are so finicky with pad Earlies and pad Misses.
It's form, notice how he uses his toe/forefoot and lifts his heel when he goes for a center directly after the down arrow. Easy example is at 1:19, slow it down to 0.25x and watch the front-facing cam (not visible on the overhead cam). This is a skill 8-panel doubles players have to learn to be able to use their calves to spring from pad to pad and minimize the amount of area their foot takes up when doing crossovers (to avoid tangling feet), but 4-panel singles players don't really need to learn it and can just flat foot everything. SMX forces singles players to learn how to use their toes like doubles players. I haven't played enough Pump, but my impression is Pump players learn the same thing too.
I focus on shifting all my weight to my heels or toes for any patterns with potential Early triggers. Quickly identifying those patterns while playing has been pretty challenging

Lowering the sensitivity in software or through modding is also a thing
Better form. I play exclusively on 4th / 5th gen pads with FSRs and don't have issues with center earlies.

Sure maybe he has earlier pad models, but maybe he has the latest update of stepmaniax which includes panel sensitivity settings in the mod menu
