This might be your most impressive recipe yet, the amount of work and time management put into this is spectacular, plus the marriage of flavours. Stunning work, can't wait to try them and floor my guests
He really has the timing down perfecto here!
The timing is perfect!!
Fantastic cooking! I have cooked the seven fishes many years ago for our parents. I like how you do the preparation , I tried to do it in one day and it was difficult.
This could work for Lent minus the scallops.
I love that you give the history behind this! I'm Catholic but not Italian so I was unfamiliar with this tradition! For our Christmas Eve, we went to the Christmas Vigil Mass and got back home around 10pm. Usually it was just sandwiches for a late dinner. Then Christmas day was the prime rib dinner!
What is there a twisted in Catholic church I did think they all are the same
that's the tradition also in some areas in the south of Italy. The big fish dinner at the eve is more from Neapolitan tradition and as well in central italy
Interesting. Traditionally Christmas Eve was always a day of fasting and penance and abstinence from meat. The latter aspect sounds like where the 7 fishes thing comes from.
I'm Italian born and raised in northern Italy, I've never heard such thing as ''the feast of seven fishes''. It's definetely not an Italian tradition, it's just regional.
I am not American-Italian, but now want to be one.
Dude. Chef John rules. Pretty sure he’s influenced all YT chefs in one way or another. ❤️
I come from a Sicilian American family but I didn’t actually grow up around them so I didn’t get to celebrate growing up. Now that I have my own kids, I’ve been trying to incorporate Italian traditions into our holidays. I love that you talk about the history of the celebration. Happy Holidays🎄
Oh hell yea! The feast! A mainstay in every Italian household in Brooklyn! My wife and I still do that at Christmas time ! Even though I’m not in New York anymore 😂
This is the greatest cooking video of all times for me. I don't think I could do all of this all at once in my tiny kitchen as a student but it's wild how much you taught me about sea food in less than 30 mins! One day I will throw this feast and invite over my best friends!
thank you this wonderful video. as a jewish person who keeps kosher i can eat most of these dishes. branzino is a kosher fish. the antipasti is elegant
and looks delicious. salmon and tuna are kosher fishes. the clams, mussels, scallops, and shrimp are not kosher. however i can use kosher shrimp
( whitefish shaped and spiced to taste like shrimp- dyna-sea brand with kosher authorization symbol) with a passata for that dish too. good explanation on pot/pan handles. before the inquisition southern italy had many italians who were jews, they were there there since 70 a.d. rabbi barbara aiello has a very interesting video about that. i will look for more of your recipes and forward your videos to friends. your channel is definitely not just another cooking show. it is a very special one. buon natale!
My mother and grandma did the feast of the 7 fishes every year when I was a kid. Now that they are gone the tradition ended. This is an amazing twist on it that sounds delicious. Great job and thanks for the great content.
You definitely have to visit Mexico. I have seen many videos of yours and I have noticed that your cooking style is very focused on Italian and homemade. The essence of Mexican gastronomy is found precisely in the homemade, and I am a believer that Mexicans and Italians have many cultural and social similarities that have a strong impact on our gastronomy. If you visit Oaxaca or Yucatán I can assure you by putting my hands on fire that whatever you eat you will end up loving it. I hope you read my comment.
I think I hopped on board this channel when you were around 10k subs. It's astonishing what you've accomplished in, what feels like, a blink of an eye (4 years!). You, my friend, have crushed it. Take some time this holiday season to savor and appreciate your success. It is well deserved.
I like how you give shout outs for things you learned from others.
You"re the GOAT
So so fantastic! I grew up with Christmas Eve being bigger than The Christmas Day celebration. The Feast of the Seven Fishes has been part of my youth, and life. I love your spin, modern and playful. That main tho... That salt baked branzino! Excellent! I learned that years ago from Chef Pasternack at Esca! He used to serve it table side in a wood shipping crate, and clean it in front of the guests! Wonderful episode Stephen. Merry Christmas sir!
The Polish tradition on Christmas eve is 12 non meat dishes though we haven't ever made that many. It's for the same reason
HOLY SANTA CLAUS. Dude. This is absolutely the most amazing Italian-American cullinary wonder I have ever experienced the Christmas Joy of watching. Go off. Yeah, this is my goal to make one year. Thank you for the step by step. Rock on.
No way!!!
i love the Tchaikovsky playing in the background!
Had no clue this was a thing but it's a fantastic idea for Catholics, especially when Christmas Eve falls on a Friday
We never cooked our fish, but bought a cold (Italian) seafood salad. Loved that stuff - but hard to find here in Florida these days.
You’re absolutely right about NOT using cooking pans/skillets with round handles since they slip around.
Masterful! As a New York Italian, I too was not brought up with the notion that seven fishes were part of Christmas Eve. in reality, we probably had more than seven, but never was there a mention of 'seven.' I loved the comment about cheese on fish sauce. Cheese goes perfectly with seafood sauce and anyone who subscribes to the taboo of not eating cheese with fish really knows nothing about cooking or eating..
Amazing. I’d honestly be too tired after all this prep to sit n entertain guests. However, I’m truly inspired. Great video and amazing job. I can almost taste it.
You have got to be kidding me! Bro I am tearing up dam ur nonna must be proud lol I am now on my way to Publix to look for some fish bc u inspired me! Wish I was ur neighbor or something 😅😂👏🏽✨
This is a beautiful meal. I may do something like this for next year as we already have a menu with a million dishes this year lol. Great job man.
You gonna do it this year?
Been watching videos from this channel for awhile. I'm predicting this guy will be the next Anthony Bourdain without the crazy stuff. I'm obsessed
I'm stoked to watch. Love your channel. I'm pesceterian. Perfect
Your videos always bring me back to my Italian god mom rest her soul ❤
As an official Fisherman, I'm here to tell you that's a pretty fine meal!
Excellent recipes. I always stuff a filet of sole with crabmeat ( 2 fishes) and I make a pasta with muscles, clams, and scallop. (3 fishes). I do a shrimp cocktail and stuffed calamari appetizer (2 fishes) . This year I’m going to make your pasta. Looks super delicious
If you live in the USA, you’re most likely just eating standard flounder marked up for a fancy name. That said: flounder stuffed with crab is always an excellent choice.
Salute’! 👊😉💥
One recent year I made The Salad of the Seven Fishes for Christmas Eve. It actually turned out great, and was reasonably quick to put together.
I did that one year. Salt, olive oil and lemon. I only added a little celery and that was it. It was delicious
A blessed happy new year for you and everyone here watching for 2023🥳🎊🎉💥💥💥
I really appreciate the attention to detail on the timings. Something massively overlooked for most home cooks, it can be the most difficult aspect!
My soul cried a little when I saw you cut down the scallops.
Have come to the conclusion you're 50% chef, 50% artist.
Happy New Year!
I have been in the kitchen for the last 10 hours so when I watched this video I kept falling asleep. You provided so much information in this video and it was the best bedtime story ever. I'll watch it again when I'm fully present. Until next week.
creepin towards that million subs. That would be a nice Christmas present wouldn't it :)
This may be the most phenomenal meal I will never make but I definitely enjoyed watching the mastery required to prepare it
The most amazing thing I learnt in this video is that Steve is a golfer
As someone who watches every episode
You are up there in my favourite cook to watch
Love it Keep it up ! 🍻
This is very impressive! No doubt my favorite cook on youtube. Reminds me of an italian grandma. His dishes are top notch
I was raised in a Portuguese household and we celebrate the Christmas Eve 7 fishes celebration. I love it!
My family did Feast of the Seven Fishes on Christmas eve but just our immediate family. We had extended family over for Christmas day.
Omg I'm so excited!!!
For Christmas eve my chicago italian family usually does crab cakes, breaded fried shrimp, tomato pasta with squid sauce, octopus, a baked white fish, scallops, and calamari. one year we were short a fish and branched out to Japanese cuisine and made nutella tayaki for dessert. it counted because it was at least in the shape of a fish lol.
This episode was amazing, I am a retired chef and it was joyful how you presented Bravo and merry christmas
Such great inspiration for Christmas Eve. Got some Jersey Italians to cook for this year. Beautiful dishes. Thank you for sharing! Love your channel!
This was not only educational (Italian tradition), but inspirational as well. Well done vid.
One of our traditions on Christmas eve is meat pie. Not tourtiere like other Canadian provinces, but braised beef/pork/chicken in a flaky crust. Seafood chowder for Christmas day lunch includes: scallops, mussels, salmon, shrimp, lobster in a rich creamy broth.
What you've seen in this video isn't Italian tradition. I'm Italian from northern Italy, on Christmas Eve I usually have cappelletti in broth (cappelletti is stuffed pasta similar to tortellini), and for Christmas I have ''lasagne alla bolognese''...
Congrats on hitting that 1M mark! Well done indeed! 👏
The Feast of Seven Fishes was the highlight of the Christmas celebration in my family when I was a kid. It was always at Grandma and Grandpa Caruso’s house. We would feast before Midnight Mass which would put us kids into a food coma so sitting still during church was never an issue. Staying awake was. After mass we were dumped back into the station wagon and hauled home where my dad would carry us to bed. The next morning we would open presents and would then do Christmas dinner at whichever Aunt and Uncles house that was hosting it that year. This meal was potluck unlike the Feast which my Grandma made with the help of my spinster aunt, Josie. We were allowed to have wine with the Feast, Chianti that my grandfather made from grapes he grew himself. I used to do this same tradition with my kids but unfortunately it died out as they grew up. Now I live far from the kids. I moved to Texas to get away from the nasty cold weather of Michigan a few years ago. I still make some things from my Italian childhood, Canoli and Bisc Dolce as well as a few other traditional dishes, but I do miss seeing all my cousins, aunts and Uncles. Most of them are gone now but not forgotten
This video was an absolute triumph. Just great.
Italian grandma!! 🎄
Wow! This was amazing. I usually don't like cooking whole fish because I don't like worrying about the bones (espinas). The other dishes I would love to make.
Great Job! You have mastered the Christmas Eve Dinner!
I learned from an old fisherman that if you put white pepper in your salt water, it will purge your shell fish quickly. I always used cornmeal before❣️✌️🍀🙏💗♾Maine, USA 🇺🇸
That take on spicy tuna with crispy rice using arancini is so damn genius. Idk how you come up with this stuff.
Greek-Canadian version for a Taiwanese friend and her husband - "Seven Bites" [shrimp, sablefish two ways, scallops, smoked sturgeon, candied salmon, & fresh salmon] served in a pair of bento boxes the evening before Candlemas... One new recipe from Hawaii in there just to keep her on her toes.
I have actually clapped at several points in this video. Amazing! I can't wait to make this. Thank you!
Wow! What a production! I need a nap, just from watching it all! Every dish looks SPECTACULAR. Bravo.
I love this. Invite me over. I’ll bring the wine
Some channels do an 8-minute video of one, simple recipe. "The best peanut butter sandwich" or something. Nothing wrong with that, truly--love those channels.
This, though. This is bloody masterclass. Good heavens.
Beautiful!
We always had an Italian Christmas Eve meal. Yes, the dishes were seafood but we never had a name for it.
I did this, Chrismas day and it was.................... fantastic. Thank you again.
Looks like a great menu! Definitely use egg whites in the salt crust. As they cook, the salt becomes a shell which stays in bigger pieces. It makes it way easier to get off without getting salt on everything.
Can you imagine the price of all of this if it was ordered at a restaurant! Astronomical, to say the least!
We keep it simple, Baccala with 7 sauces, garlic bread and 2-3 salads. Pasta everywhere! Happy Holidays!
hold on! I willl def try that buccatini recipe ! that shrimp stock tip is fire!!
Appreciate the context. I'm Italian-Canadian and my family did it here (when I was out west with the bulk of them.)
I always loved the Calamari & Deep Fried Smelts on Christmas Eve. I HATED Baccala soup when I was younger, but now that my Nonno & Nonna have passed on for a number of years now, I yearn for it more than ever.
Happy belated Birthday for yesterday. I’m getting addicted to ur food, the Italian grilled cheese sandwich…..🤤🔥
Omg! What a great show.
been using that pine ridge for years as a great cooking wine that drinks just as well
Seafood is my favorite and this meal is like heaven to watch you make. I have to try this. Gonna video , just so you can get a laugh.
Oh, yes!
My great grandmother was Irish but she married my great grandfather, a Scicilian guy. She decided to convert to Catholicism for him and learned how to cook from his mother, so we always ate good ass Italian food growing up. Once I got old enough to really remember, my great Grandma was too old to be cooking all the time, but she always talked about the "7 fishes" and how good it was. Thanks so much for sharing this video!
I thought the Irish were catholics...
@@pinky6789 My great grandma was originally Christian.
Wow... A great feast of the 7 fishes. Thanks much. 🐟
Soon close to that 1M subs. You can taste it!
Really looking forward to your print cookbook! Happy Holidays!
The day before Christmas Eve
“Tibbs Eve”
We do this in the south, but not with northern ingredients per say. We make West Indies salad with jumbo lump crab meat, marinated crab claws, shrimp cocktail, fried shrimp, fried oysters, fried speck, crab cakes
🤩🤩🤩 thank you for this recipe. I do the typical American feast but would like to try something new this year. ❤️
Bread crumb on pasta is typical sicilian, I love it! I also make spaghetti aglio olio e peperoncino with anchiovies and bread crumbs (muddica).
You probably don't even know me, I am also a CZcams chef. I've always dreamed, of putting the feast of the Seven fishes on my CZcams channel. I think you did an excellent job on this particular video. I've been a subscriber to you For some time. Missed opportunity, now that I'm retired I'm going to reinvent my channel, started back in 2011. When we stay connected. At any rate great job on this recipes.
no matter how many times i watch these videos, i'll never get used to the mouthpiece for the go-pro 🤣🤣🤣 why not just get a helmet, seems so much easier??
no matter what, this 7 fishes looks incredible. authentic feeling and lots of love added
Loved the presentation...thanks
I’m so glad you explained how to make the risotto! Gonna try that wine…
Absolutely love your cooking and videos!!!!
Broooooo!!! BRAVO!!! BRA-VO!!! As a seafood lover, this is an absolute masterclass!
I agree. Pine ride is nice.
Merry Christmas!
Absolutely stunning!
Awesome!
Gotdang that looks incredible! I wish I were back in Brooklyn (instead of the middle of the country) so I could have access to fresh seafood again. (That salmon was obscene. 😢)
This looks like a wonderful Christmas Eve party, but a hell of a lot of work!
So I will be making this!
looks phenomenal 🤤
I love seafood for Christmas! Love to see this.
Thank you for this! I saw someone the other day say “since when is seafood a Christmas food?” 😳
Has been for years on the Atlantic Coast of Canada
I am making this! Thank you!
Outstanding.
Wow!
Bravo!
