This is the first episode in a series of videos where we explore Rum Barrels! The only logical place to start was with Beachcomber's Rum Barrel. There are 13 ingredients for this one and in addition to lots of rums, Rum Barrels usually need lots of ingredients. While some of Don's drinks have a 2 per-customer limit, this one is supposed to be served for 2 people so take your time and be cautious... it will sneak up on you

Beachcomber's Rum Barrel
1 dash Angostura bitters
6 drops or ⅛ tsp Pernod
6 drops or ⅛ tsp Grenadine
1 tsp all-spice dram
1 tsp falernum
1 oz honey mix (30 ml)
1 oz lime juice (30 ml)
1 oz grapefruit juice (30 ml)
1 oz orange juice (30 ml)
1 oz pineapple juice (30 ml)
1 oz light rum (30 ml)
1 oz of a gold Jamaican rum (30 ml)
2 oz of an aged demerara rum (60 ml)

Great news, 5-6 more Rum Barrel videos coming our way. Derek, you mentioned Steve Crane's 1961 Kon Tiki, Trader Vic's Rum Keg, Mai Kai Barrel O' Rum, and the shrouded in secrecy Smuggler's Cove. Really looking forward to your take on my white whale rum barrel from Smuggler's Cove. Many have tried to reverse engineer it; wishing you good fortune.
The recipe I use at home based on my internet research (having never had the real one) is this (which is delicious):
* 1 oz white rum
* 1 oz aged Demerara
* ½ oz 151
* 1 oz lime juice
* 1 oz pineapple juice
* 1 oz Demerara syrup
* ¼ oz vanilla syrup
* ¼ oz allspice dram
@@brandonsanchez9453 Thank you for sharing. Very similar to the spec I use. I use 1oz Molasses Syrup instead of Demerara plus 1 dash of Angostura Bitters. I use ED 3Y, ED 8Y and Plantation OFTD as the rum mix.

Great start to the series. Looking forward to the rest. I plan on adding this to The Mai-Kai cocktail guide as the ancestor recipe. There are so many similarities, I'm sure Mariano Licudine just tweaked it slightly to create his version. Also worth noting: I think this is the version (or very similar) served by Beachbum at Latitude 29 since they opened.

I’ve got my own rum barrel spec that I make. Good stuff.it’s a fun style of drink to explore! The Smuggler’s Cove drink is my favorite out in the wild!

I love dons rum barrel. I had a similar experience with it compared to yours with Garretts Grog. When you look on the recipe it's so easy, yet it delivers such a balanced and spicy cocktail. The 4oz of booze just hold me back, drinking it every Friday. Love to see other interpretations, but I reckon that I'll stay true to dons, just because of my eye opening experience with this particular cocktail.
(And don't get started with summglers cover version as they purportedly use selter to "lengthen" it 😮, anyhow Martin is a great influential rum nerd & personality, and I love his work.)😂

I use 2 parts honey to 1 part water, but some specify 1:1 ratios.

Yes. Either 2:1 or 1:1
Don beach recipes are always so damn complex with 10 ingredients... It's just really not realistic in the home settings lol.
