Wow. I made this today and it was hands down one of the best cakes I have ever had! I didn't have sour cream, but I substituted with homemade plain yogurt, and it was still AMAZING!
I'm definitely making this tomorrow with the ripe pineapple that I cut and I know it will be good cause I have tried your recipes before and have gotten compliments on it, thank you laura for helping me learn how to cook great desserts!! :)

I tried out this recipe but changed a few things here and there; I left out the cherries, used peaches instead of pineapple and added some orange zest to the batter. It was delicious and all of my family members liked it (even my smaller nephews and nieces)! thanks Laura for the inspiration :)

adding pineapple juice to the batter actually keeps it super moist as well... i did one with store bought cake mixture.. and i cut the water measurment in half and the remainder was pineapple juice and it came out so moist and delicious...
greek yogurt works well in place of sour cream too. Looks delicious!

Recently I learned that another way to determine if the pineapple is ripe is to boot the leaf that is crowning the bouquet. If it comes out easily means it is ready to be consumed with all their juice Thank you for sharing your knowledge.

You can also make this cake in a deep-dish cast iron skillet. Maybe not fill the skillet too full of the cake batter. Delicious!

Great video Laura, love your recipes, you can pick up a pineapple corer/slicer on Amazon.com ..... i got one myself a few months ago, you can get a set with 3 different size corer/slicers in it, i think the brand is Vacuvin as far as i can remember.

Where can i find the recipe!
I was thinking about the times I've had to remove the center of a pineapple. Once I used a ravioli cutter (didnt have anything better) and the second time I used the lid of a bottle of cooking oil. Laura, you have a bottle right behind you on the counter, I think that would work perfectly .....you may consider that as a quick fix :)
Can you take a glass or something to press on the core once you cut it?
I wish I could just grab it out of the screen lol it's my dads favorite and its Father's Day
