The crown jewel of which, despite Artie Bucco's hapless attempts, is the cuisine of Carmela Soprano.       Those pots are monsters, there is no other way to pour it and props to him for not dumping it everywhere. I've tried every way and I still get burned if I have to pour stuff out. Wouldn't trade my set of cast iron for anything, you just learn to work around it.

    Just to be clear in Italy, especially in the regions near Neapolis, to make any type of baked pasta (Pasta al forno, Lasagna, Cannelloni and so on) we use Scamorza, or sometimes Provola, instead of fresh mozzarella. I might go as far as to say fresh Mozzarella is not used in Italian's baked pasta.
    Scamorza is essentially the italian version of low moisture mozzarella, has a similar flavour but it's much better to cook with than the fresh stuff.
    There is also smoked Scamorza, to give the dish extra flavour.
    Provola is a similar cheese, often used smoked, that melts like a boss and has a super good smokey rich flavour that makes a Neapolitan baked dish instantly recognizable to a trained palate.
    So yes, using fresh mozzarella, especially in baked pasta, is unoptimal and in many italian regions (i cant speak for every one of them) is a nono..

      I mostly wanted to shed some light on Italian traditions, since most of the world is convinced that we put high quality fresh Mozzarella in our recipe when we barely put it in the fridge. Fresh Mozzarella is best when eaten raw, sure you can cook with it but most italian traditions have various cheeses we use when cooking.
      I didnt want to sound pedantic or annoying, but i guess that's how a lot of people will read my message...
      But yeah, feel free to complain ^^

      Nvp0402 It all depends on where you’re family is from in Italy. In the south of Italy, Ricotta is huge and an integral staple of those dishes. In the North of Italy they typically use Béchamel.

    Just some curiosities, since a friend got confused:
    - in Italy Ziti pasta is much longer than this. It's a spaghetti-size pasta - tricky for this recipe
    - when talking about Lasagna in Italy, always remember that the south version uses cheese, the Bolognese one is creamier, usually with besciamella sauce. Never tried the in-between one. Seems great

    1:43 I personally and *STRONGLY* recommend that you substitute water for tomato juice when making the sauce, I find that it works *REALLY* well.
    *EDIT:* I also strongly recommend you also add a ricotta béchamel (ricotta cheese sauce) to your lasagna.

      Because those pots, especially one that size, are enameled cast iron and stupid heavy, even without being full of sauce. Trying to tip it by only the handles would be very difficult. Tipping it by holding a handle on the far end and with a hand underneath the pot, like he did, is so much easier, even if it does means he gets sauce on the handle. He had to wash the pot anyway, soooo.

    C'mon Babish give the people what they need! "What is that?" you may ask. Why, its a Drake & Josh Special of course! The possibilities are endless from Goat Balls, to Cumin Waffles, to Peruvian Puff Pepper Salsa! You could make Glue Cheese Nachos, Really Big Shrimp, or Snow made from Cheese! A few words of wisdom though, if you find an Enchilada in your fridge with no note, it might be Crazy Steve's. And remember: when making brownies, let them cook all the way through before trying to eat them! (Or don't Drake didn't seem to have a problem eating molten brownie soup)
