I do/did it by making the body parts out of different pieces of paper. Like, one for left lower leg, one for left upper leg etc. etc. Put them on a contrasting piece of paper. Take photo. Move. Take photo. Repeat. (I made a really bad one called 'Mouse' which is just a mouse that gets surprised and then falls asleep. Yeeeah...)
