That looked so nice but there are a lot of calories and fat in it, which is why I can never make anything like that....1) because my husbad cannot have high fat foods (after a heart bypass) and 2) I have to be careful how much I eat or I will put back the weight I lost. 1200-1300 calories is my limit to maintain my weight and not gain. You would benefit from using less butter / cream / cheese....and I mean that in the nicest possible way. I wonder if you could swap some of it and use Greek yoghurt? ....I use that in curries and it's nice and tastes creamy.

The chicken needs to be seasoned, not crumbed. Deep fry, then season.
The fettuccine - make your own from a mix of almond flour and a touch wheat flour.
With diabetes It's not how much you eat, it's what you eat.

That looks yummy! I make Alfredo the same way but I try to get shaved Parmesan cheese if I can. I had grilled chicken scampi with olive oil, garlic, lemon and cherry tomatoes. The alfredo looks devine. Such a simple and satisfying dish. Its usually my 'oh no I forgot to plan something for dinner' meal because its so quick and crowd pleasing. I like to throw popcorn shrimp and broccoli on top because I usually have those on hand in the freezer.
