    Hi Kimmy. it's called za'atar and is a particular herb/spice blend and there are a few brands that make it. I think it's Middle Eastern in origin and tends to include thyme, lemon, sumac and some other herbs. You could probably make your own blend if you find a recipe.

Can you make this without nutritional yeast ? Do I need garlic powder or can I just use garlic ? Maybe I will make pesto kale chips too and Korean chili chips .

    Thanks for this recipe, can't wait to try it! I'm just a bit confused about closing the oven door because I've heard cooks say you have to leave the door slightly open when dehydrating. Is this only applicable for a conventional oven?

    • @therawchef
      @therawchef  Před 6 lety +3

      It really does depend on the oven. The one I was using here goes very low in temp and has a great fan, but if you don't have that, you might need to leave the door open, yes.

    Dehydrator sheet? How is it different than using tin foil or silicon? Low temp? Well any suggestions? Fan setting? Will convection work? Loads of questions very little information? I’m sure you’re chips are great but your title says dehydrator vs oven.

    • @therawchef
      @therawchef  Před 4 lety +1

      Thanks for the feedback, I'll consider an updated video with your suggestions.
      To answer them now...
      In all cases I can think of, you'd be OK using silicone or foil, although you might find foil tricky to spread stuff on. The dehydrator sheets are not expensive and can be used in an oven perfectly OK, so getting a few of those would be an option.
      I explained that different ovens have different temperatures, so go for the lowest yours goes. Most raw food recipes ask for 105F to 115F.
      I did also explain that you want the fan on.
      The title of the video doesn't say 'dehydrator vs oven', it says 'Do you need a dehydrator for your raw food', which is why the video is aimed at that question.

    • @therawchef
      @therawchef  Před 3 lety +1

      I've not tried, but I'm sure it can be done. Still use the lowest temp and test it. Keep an eye on it, see if you need the door slightly open and make sure you time it. That way you'll get an idea how long it takes Vs a recipe that shows dehydrator time.

      +kimmyjeans2 Sumac a Middle Eastern/Arabic condiment made from ground sumac berries, sesame seeds, salt and a crushed desert herb that's a cross between oregano and marjoram. You can easily find it these days, mainly at deli's, Middle Eastern supermarkets and even health food stores.

    The commercial grade Excalibur dehydrator I would like cost a fortune. I need a new oven anyway so I was wondering if any convection oven can be a true dehydrator. I never use my oven but would like to have the dehydrator so if I can find the convection oven that works the best as a dehydrator, getting one appliance that does both is the ticket. I don't want a convection oven that can be used as a sloppy dehydrator. I want a convection oven that works as a great dehydrator. Any suggestions where to look for the right convection oven? That means an oven that can maintain a constant 110 Fahrenheit.

    • @therawchef
      @therawchef  Před 9 lety

      They are out there. All you have to do is look for one that had a dehydration setting

    • @coperniciaalba180

      that I know of, convection Dehydrators don´t work as a excalibur would to obtain crispiness and best results... so, I don´t know if a convection Oven will achieve this. Very good reviews in Amazon as well as some videos in youtube, when they actually do tell about these very important issues.

      It’s hard to say without seeing the oven, but not having a fan makes it trickier. You’ll have to use as low heat as possible and maybe slightly leave the door open and keep checking on them.
