Tabbouleh Salad - Olive You Long Time!

  • My second video on how to make a Tabbouleh Salad
    2 Bunches of curled parsley, floretts only, no stems
    1 bunch mint leaves
    1qt fresh chopped tomato
    1 bunch green scallon
    1C Coarse cracked wheat
    Juice and zest of 1 lemon
    1/2 C EV olive oil
    Salt and Pepper to taste
    *optional additions: Cucumber, lettuce, keenwah, etc
    Soak Wheat in water until soft, than drain. This could take between 15-30 min. Don't worry about it being perfectly soft, it will absorb excess dressing and water from salad.
    Wash and chop all produce by hand. Items should be bitsize for easy eating with a spoon or fork.
    Mix dressing of lemon zest, lemon juice, and olive oil.
    Mix all ingredients, season to taste with salt and pepper.
