That long wooden handle kadai is called chinese kadai, it is weight less and the metal is iron only,its colour is little light becoz of percentage of carbon added is very less while manufacturing, in cast iron they add 2 to 5 % of carbon and iron vessel It is less than that so that iron vessels are little lighter in colour than cast iron, in Chinese kadai also very less carbon content, actually purpose of Chinese kadai is to make fast foods so if the pan is light weight it gets heat soon and the food will get ready soon so it is meant for fast food preparation, its cost is 250 rupees, friend i think i have cleared your doubt.
