How to Store Excel Numbers as Text

When the video started I thought that you were just going to use the 'Number Format' drop down option (located in the 'Number' section under the 'Home' ribbon). I was surprised to learn this new (to me) shortcut. Thanks.
I believe that if you use the apostrophe, the cell will no longer contain a number, so you could reference to it in a formula in another cell and expect it behave as a number. However, if you use the number formatting option as yo suggest, you can get the number to be left aligned, but still work in formulas as a number, since it will not convert the number to text.
