    Sherson Lian kicked off his TV career with (and still is!) hosting ‘5 Rencah 5 Rasa’ on TV3 Malaysia, a cooking show that has been on the air the past 10 years, with 24 seasons and 1500+ recipes and counting!     Chef Sherson, I tried making this before using some other recipe but it turned out way too salty. Most of the recipes call for 24 hours curing at least, so am wondering if 2 hours is enough to cure the salmon? Or does it depend on the volume of salt?

      Hey there, yea 24 hrs is going to make it very salty. But that’s what cured salmon actually is supposed to taste like. Some tips you can try, use rock salt instead of fine salt. And yes cut down the hours. 2hrs for a small piece will cure it slightly. But I’d recommend anywhere between 6-8 hrs. For a whole fillet, won’t be as salty for our local palate . Good luck!!

    Now I can eat fillet salmon without cooking them. Always thought its no good to take frozen fillet salmon raw. 😂😂😂😂

      The salmon I used was not frozen :) , yea I wouldn’t use frozen salmon for anything uncooked
