QAMARVAN, AZERBAIJAN - Welcome to Qamarvan, a small village in the mountains of Azerbaijan and home to Tavakkul from @WILDERNESSCOOKING. They make amazing nature oriented food videos cooking outdoors. And today Tavakkul is cooking a whole lamb two ways - part is on a hot stone over fire and with the ribs he’s cooking them in a tandir. Qamarvan is a beautiful location, set in a valley surrounded by some of the highest mountains in Azerbaijan. It’s green, lush, and home to some of the best lambs that graze naturally and organic food. Wilderness Cooking is an outdoor cooking show that specializes in natural foods, organic cooking and oftentimes whole animals. What I love about this is how therapeutic their cooking is. Nothing is rushed and the sounds are kept natural.
Today, Tavakkul is cooking a whole lamb as fresh as possible. He has a number of amazing cooking techniques around the yard and today he’s cooking half the lamb on a fire hot stone and the other goes into the mud tandir oven. He seasoned the meat with salt and pepper. For the hot stone the trick was the amount of lamb fat he melted down to almost confit the lamb in its own dripping fat. For the tandir lamb, it was cooked then basted with sour plum sauce. Let me tell you, not only does Tavakkul’s cooking look good, but it’s insanely tasty. Everything is saturated with as much lamb fat as possible giving it the maximum amount of flavor.
It was an incredible day, the food was delicious, and the Azerbaijani hospitality was even better.
Tavakkul does have a restaurant in Qamarvan that’s call Qaya Restaurant that you can definitely check out when you’re in the area to get some amazing local Azerbaijani food.

When Mark started this series in Azerbaijan, I was like he’s gotta meet the Wilderness Cooking guy. Then behold today’s video it happened and I got to learn so much about Azerbaijan and finally learned that the guy’s name is Tavakkul. Thank you Mark. 👍 superb!

One bad thing the guy did is touched the cooked vegetables with the utensil he used to handle the raw meat then moved the vegetables off with the same device. He should have moved the vegetables off first then place the raw meat down.

Mark, it was a pleasant surprise to see you with brother Tawakkul of Wilderness Cooking. All the food he prepared was obviously, "Super👍"!!! He is very creative and a great craftsman as well. Most of the things in his Vlogs are crafted and created by him. A big Thank You to Adnan Huseynn to make your trip possible. Azarbaijan is in my wishlist as well to visit there, meet the people and see their culture. 💖
I watch his channel couple times a month. What I love about his cooking is that he eat straight from the plate when it’s finished. No fancy. No crazy sauces. No fancy cutlery. Straight onto a big plate and into the mouth.
The scenery, the simple and yet delicious cooking complement each other and the ambiance created by nature is magnificently highlighted by Br. Tavvakkul’s serene personality. What a joy to watch from Southern California and wishing I was there to enjoy his mouth watering dishes. Just like nature, his food is natural and not overloaded with spices. I discovered his channel in 2020 when languishing in those crazy COVID lockdowns. It saved my sanity! He was new at the time. It’s been so much fun to watch him build his outdoor kitchen bit by bit. I remember they experimented with music and we all said ‘no music! Just the natural sounds please 😆. Completely unpretentious and so therapeutic. The videography is exceptional.
