Is it normal to encounter a bit of resistance when putting the dipstick back in? I notice you poked it in kinda swiftly, I re-inserted it a bit slower

Some dipsticks go in and have to curve to get into the engine so it is normal to have a little resistance, but not a lot.

Should I check it when the engine is cold or warm?

My 2015 Sonata 2.4 SE manual says get to normal driving engine temperature (midway mark between cold and hot) and then turn off engine and wait for 5 to 10 minutes before checking the engine oil level. Make sure your car is parked on a level surface. So to answer your question, warm.
