Cooking Steaks at 850°F in my roccbox pizza oven!

    This video shows you how to cook great steak in your roccbox or ooni pizza oven . i cook 4 tenderloin steaks in my roccbox pizza oven by gozney! I also include my mistakes and what not to do! I cook them for 3 minutes on each side in a cast iron pan at 850 degrees Fahrenheit! I also grill up some Brussel sprouts in my webber genesis!

    Use tongs instead of a fork to move the filets so you don’t have to pierce them! They look fantastic! Nice work!!

    thanks for the video, always good to learn from OTHER'S mistakes! My Roccbox will be here Wednesday! i recommend some good tongs for flipping the meat around, instead of puncturing...

    With all due respect man. Not trying to be a smart ass. But I know steak.
    Next time try and use a flat iron skillet. Will get more of a mallard reaction to more of the steak area.
    When you put them in don’t turn them so quickly. And I would say to only put two at a time in the skillet.
    Leave the two steaks in for around 2 min at that heat. Don’t mess with them or else it will kinda ruin the sear.
    Also try avocado oil. Got a higher smoke point than canola.
    When you get a good sear on both sides then you can flip more often.
    If you want put some butter in with lower heat and baste.
    Your steaks still look great though btw.

    Looks delicious . We ordered the Roccbox yesterday . It's a tax free weekend in Massachusetts . So we bought everything for it including table , cover , shelf ECT . Hopefully the Dome will be available next year at this tax free weekend . 👍

    Hmm, I brined my prime ribeyes overnight rather than just before cooking. Highly recommended.

    I would have cooked the Brussels sprouts in the Roccbox as well.

      I love Brussel sprouts! Those are a little harder in the oven do you have to crank the heat down to the lowest setting or I have also microwave them a few minutes to soften them then season them and then just cook them in the roccbox Until crispy. If not it’s tricky to get them soft enough without burning at 850°F +. Thanks for watching, and I appreciate the comments and feedback!
      Can’t remember I may have actually cooked brussels sprouts that same evening but I probably had them on the gas grill right beside the pizza oven!

    We ordered a roccbox and should get it Dec 3rd. Thank you for your videos, they have been very helpful. We all make mistakes now and then and glad to see you can own it with humor, thanks to the pizza and steak gods! And thankful to NU2U product recommendations. I tried to buy a cover and they seem to be in short supply, may have to use a tarp for awhile. Looking forward to future videos.

      Thanks so much for watching and letting me know about your new Roccbox! Although i do use my new DOME oven more these days, I still keep my Roccbox up and running for when i just want to cook 1 or 2 pizzas or if it's raining :) Regarding the cover, worst case you can just pick it up and move it out of the weather if needed, the only thing you need to protect is that the stone floor inside doesn't get wet, so if you have a covered porch or patio you'll be fine! Best of luck and keep me posted after you get your new oven!

      You won't regret it. I was a little doubtful about how quick it cooks a pizza but it really does.
      If you have the wood fired option, OMG, amazing.

    I just got my Roccbox and very excited to try things other than pizza in it eventually. Does the splatter from steak/oil/other foods dirty the inside or make it greasy? Or does the high heat burn off all that? Any additional cleaning required after cooking steaks in it?

      Hello Joshua, congrats on getting your Roccbox, you're going to love it! as long as you cook things in a nice heady duty pan you'll be fine and yes if you crank up the heat and just let the oven run for 30 min or so it will self clean any mess you make in it!

    Ordered my Roccbox today with the Black Friday deal. Struggled between an Ooni Pro and the Roccbox for nearly 9 months. The Pro mainly for size but was dismayed by the constant 4-5 month shipping delays and the fact that it gets way too hot on the outside. I considered waiting for a Dome but it's likely outside my price range at least for the next few years as I already have a Big Green Egg. I'd already delayed the pizza oven purchase thanks to Covid-19 financial caution.
    Are you going to order the Woodburner 2.0?

      First off thank you very much for watching my video, second thanks for taking time to leave a comment I appreciate hearing from people! I ordered my wood burnee 2.0 a few months ago and just received notification that it’s shipping this week! I will definitely be making a video with a review of it! In reality I think you’ll find you use gas way more often, it ends up making a better product it’s more consistent and a lot easier. Regarding the size, it’s nice having a bigger oven but realistically you only be making one pizza at a time anyway and a typical Neapolitan pizza is between 10 and 11 inches in diameter so it fits perfectly in the roccbox! And only taking 60 to 90 seconds per pizza I can crank out five or six pizzas for the family i. No time!       @@HarplandProductions understood. And yes I was aware of the pizza sizes. I was born and lived in Naples (dad Baby mom Greek) many years returning back in 2007 when my parents moved back. I grew up eating at Trianon and Da Michele among many of the other lesser know and in many ways better pizzerias off via Toledo and piazza Plebiscito ;) If you're ever there go to Pizzeria Trianon but the one in Vomero, not the one down town. Both are good but the central location is swamped with tourists.Trianon has many options, all very good, Da Michele only 2. Eggplant is the bomb. But be warned, Naples is an ultradynamic city; Europe in the extreme as they say. Chaotic but beautiful. Just do your research first to know what to avoid and expect. Those who do always have a better experience.
      The larger pizza is just easier for quickly feeding my family of 4. We normally make 2 14-15 inch pizzas. I don't make the 2nd until it's needed, but that is electric oven cooking so the 8+ minutes I'm accustomed to is about to revert to a fraction of that... I can't wait!

      Thanks for the tips! Typically i wouldn't crowd the pan but had a bunch of hungry teenagers waiting to eat :) Don't worry about using the fork, There actually isn't any difference in using a fork or tongs for turning meat in terms of losing juice, it's an old wives tale and it's not like a balloon that if you poke it it will all leak out, there hundreds of individual muscle fibers in meat so when you poke you are olnly getting juice from that one little fiber you poke. www.cooksillustrated.com/how_tos/6401-does-poking-meat-during-cooking-cause-moisture-loss
