Orban's Oral Histology and Embryology 13th edition on page 51 says : The enamel consists mainly of inorganic material (96%) and only a small amount of organic substance and water (4%). That water, in volume amounts to 6-7 % , Dentin on the other hand which has 35% organic content and 65% inorganic content has 22% water.
