"How you doin'?" made me laugh out loud! Love her.
She said the quiet part out loud and made it plain -- *COLD butter.* You also have to use authentic Parmigiano-Reggiano from Italy, but if you do not carefully regulate the temperature as you combine the pasta into the sauce, your cheese will clump.

I would argue she said 2 "quiet parts out loud", she also said European Style, or high fat butter, and it does make a difference.

It is great to see the actual Italian fettuccine Alfredo, only thing is that you don't need the olive oil in the pasta dough,in Italy we never do that.

Love watching you cook. I grew up watching my Nona making fresh pasta. It would be drying all over the kitchen. Never enough cotton kitchen towels. Thin wide even Ravioli. She did it all from scratch. Long rolling pin, butcher knife no machine.
