Thank you for this! I am definitely going to try it. As a kid, I was not a fan of Kraft mac & cheese. My brother loved that crap but I thought it was icky. I am a vegan, so I make vegan mac and cheez with what is essentially a savory tapioca pudding in place of the cheese part and rotini noodles. I fry up some tater tots in the air fryer (from frozen) and then mix some lightly steamed broccoli, carrots, and browned onion. If I don't have tater tots, I'll put in leftover roasted potatoes or no potatoes at all.
