"Sorry, I wasn't listening" is extremely rude.* This means, "I know you were talking but I had no interest in what you said." You should say "I'm sorry, I didn't hear what you were saying." *Never say "Sorry I wasn't listening."* 1. Always say this as "how's it going." No contraction sounds robotic. 4. "Can't complain" sounds like "Things aren't great but really it's not THAT bad" 5. "How do you know?" is not an idiom. It's just normal English.
