Just built this in 1.21 Java for a single hut. By the time I finished the afk platform it was night, so i waited through the night and by the time it was morning I already had like 4 stacks of redstone, plus the other stuff. Absolutely insane how well this worked! Thank you!
Couple things for anyone else, I did some prep to my area beforehand. I flattened the land within 50 blocks of each side of the hut itself (heck of a lot of work but it was well worth it) and then after that I lit up the entire area with sea lanterns. You dont gotta go that far but the point is to spawn proof a pretty good amount of space around the hut as well, to cut down on sharing the mob cap with other mobs. I had to get rid of a couple of mountains, which sucked. but it made spawn proofing the surrounding area much easier!
I did see some other tutorials involving iron golems and no redstone, but I gotta say, this one is by far the simplest. even for me who is kinda so-so with redstone skills, this took no time at all and works well! :D
I'm in the middle of my first hour test now, I'm imagining I'll get similar rates but I'm curious to see how the spawn proofing might have helped. I'll come back with the results :D

And I basically got the same rates as you for the items. I didn't know much about witch huts, I guess no matter what you do they kinda only work so fast. That's okay though, I've got more Redstone than I'm prolly ever gunna use in a lifetime 🤣

7/10 tutorial my brother me and my cousin just did this in our realm and all the block placements were sometimes confusing and like which direction to do it in but overall good tutorial 7/10 im getting some good redstone thanks bruh

I added a bubble elevator to the afk spot and put an auto clicker on… got three times the loot with a looting three sword

Built this yesterday and it's working great! I hooked my output chest to an item filter feeding into a Crafter to automatically compact all the redstone into blocks (mostly to save on storage space, and for ease of transport).
Left it running a little over an hour and got approx 7x stacks of redstone blocks, which does indeed come to about 4,000 redstone altogether.
I do have one question: the minecarts make an awful racket once the farm is up and running, is there any way to negate this? E.g. would using a Powered Rail (without powering it) instead of a normal rail help?

No, you can't add more layers because witches only spawn inside the witch hut bounding box.
You can use looting 3 sword, but you can't afk under the farm.
Yes, the drops are too high because in 1.21 witches drop a lot more of redstone

How about i use a water bubble elevetor to bring witches up to a killng champer on the afk spot ?

Does anyone know if the witch hut needs to be surrounded by swamp? i feel like it might be a special case but the only witch hut ive found is at the very edge of the swamp and the entire other side is surrounded by dark oak forrest and i dont want that to hurt the performance of my farm
The spawn platform needs to be all in a swamp. Sometimes a few blocks are in a river biome or something else. If it's only one block and perhaps you like the location, I'd built it anyways.
Use F3 and check if the boundingbox is in a swamp.
