  • Marcus makes antelope sliders or what he calls "Arby's Sandwiches" with smoked antelope! Recipe below!
    Equipment Used
    MEAT! 10" Slicer - alnk.to/31qWNoW
    Traeger Pro Series 34 Pellet Grill - alnk.to/faBePhn
    Ingredients
    Pronghorn Slider Sandwiches
    - Pronghorn or other meat roast
    - Seasonings (Measure to Taste)
    - Salt
    - Pepper
    - Powdered Garlic
    - Powdered Onion
    - Smoked Paprika
    - Italian Seasoning
    - Hawaiian Rolls
    - Arby’s Sauce
    - Horseradish Sauce
    Fries
    - Several Medium Sized Russet Potatoes
    - Breading Mixture (Measure to Taste)
    - Flour
    - Salt
    - Pepper
    - Smoked Paprika
    - Enough oil to cover fries
    Directions
    Pronghorn Slider Roast
    - Bring roast to room temperature, pat dry, then apply enough seasonings to create a crust that covers entire roast
    - Bring smoker to 250 degrees
    - Add roast to smoker and cook until it reaches an internal temperature of 140 degrees.
    - Let rest for 5-10 minutes before slicing.
    - Once rested, slice thinly then build your sliders
    Marcus’s Famous French Fries
    - Using a food processor or knife, cut potatoes into French fries size
    - Blanch using hot water and salt
    - While potatoes are blanching, create a batter by mixing flour and seasonings.
    - Strain French fries from blanch bath
    - Dredge French fries in batter then gently drop into hot oil. For best results, try and maintain an oil temperature of 350 degrees
    - Remove from oil and dry on paper towel. At this time, test a fry or two and adjust seasoning as needed.

      Haha slicers aren't cheap! MEAT! does make a 7.5" meat slicer that'll run you $130 and I'm sure they'll run a sale pre or post hunting season. I've had mine for about 4 years now, much more practical than the 10" slicer. The 7.5" is easier to store at the house, less surface area to clean and has no problem slicing through any meat I've put through it. - Blake

      @LastChance.
      Some people just work with what they have until they can afford to buy better tools. Maybe you should try saving up for a nice slicer! It will work for home made bread, fruits, vegetables, cheese, meats and other things.
