How to pop popcorn in large machines

    These big popcorn machines pump out pounds of popcorn. This Cornado is mounted with a corn treat mixer. A whole popcorn shop in one location.

    Push buttons to heat up machine. Once the machine beeps it is up to temperature to add seed and oil. To pop regular movie theater buttered popcorn. 48oz of seed, push button with recalculated amount of oil. (never need to measure oil). 2oz butter flavored salt. Pour the butter flavored salt into the butterfly seed. Then just dump one container in. Push the button for oil, dump the container with salt and seed in popper. Shut lid. Kettle gets very hot. put lid handle does not. Kettle dump handle will never get hot. Always get another batch ready. So as soon as the batch in kettle is done, dump and add new batch. Popper can pop for hours. It is better to pop a lot a batches to get the best results. Each batch is going to take about 3 minutes. First batch always takes a little longer. Kettle was up to temperature. When you add the oil and seed it brings the temperature down. Then you have to wait for the temperature to come back up. Second batch will be faster. Buttery and salty popcorn with this batch. When it slows down to one pop every other second it is time to dump and shake. Bring it back up and right away push button to add oil. Add the container you had ready of seed and salt. Now this is your second batch. Toss popcorn to allow the un popped seeds to fall through to old maid pan. When mixing popcorn with scoop have put scoop all the way down to pan to have metal hit metal. After two batches you start bagging up the popcorn. ( use large bags and twist tie tight to keep fresh). Now we are going to pop mushroom seed. We are going to use 32oz of seed and half the salt. You are going to use this popcorn to make caramel popcorn and cheddar popcorn and they have flavor. The reason to go right into mushroom is the kettle is still hot. (makes a bigger pop) Remember always have your next batch of popcorn seed and salt ready. Sift to get all broken pieces and un popped seeds to fall through holes. Popcorn will last a week in the bag before you need to use it to make caramel popcorn or orange cheddar popcorn.
