      My cake top is perfectly smooth, not a single cracked, when I unmould after 1 hour and 50 min as stated, shocked the life out of me. The cake below the browning top has multiple folds, exactly like a person who lost 30kg of weight and the skin are all fold in layers!!! Not straight and smooth ~~!!

    Followed his recipe exactly, got The bottom of the cake uncooked about 1-2mm thick. I was wondering if the paper towel at the bottom is too thick?
    Cut away the uncooked part, the cake taste perfect!

      Mine also has a very thin layer, less than 1 mm. I have tried making orange cotton sponge with orange juice (which have no oil) and it doesn't have this problem, so I think may be is the amount of oil. You may try reducing the oil by 10 g and see if it does help. Also make sure the batter is well mixed, i.e. mix until no green stripes visible.

      I did another one with strawberry juice instead of pandan, with the same amount of oil. I removed paper towel to 2pcs only. No problem! But it didn’t taste as moist as the pandan, still as soft and nice tho. Does the water temperature and level in the water bath matter?

      @@sreydyanna448yes it does. But after it was fully baked I let it cool down in the oven itself for about 3 hours. I didn't add yeast unfortunately.

    thank you for the recipe. It tastes amazing.
    but my cake always crack at the top.
    I put 150 Celsius and even cover with aluminium foil halfway thru while baking.
    I hope you can advice me on fix the crack

      I haven't faced this problem before. Do you beat you meringue until stiff? Just whisk until soft peak.

    Just finished bake. Taste good,just eggs can feel much more than pandan . But cake is soft and smooth,but it's not rise at all! And top is "darkish" and thich,hard.
    What I did wrong?

      This cake has a lot of eggs, so the taste of egg is strong. Do your batter deflate, if it is runny then it has deflated. Does your cake shrink after out of oven?       对, 用Asize的蛋。有些烤盘底部有接逢,水会渗入,所以需要在烤盘底部铺一层厨房纸巾和用铝箔纸包上。厨房纸巾可以吸入意外渗入的水,也可以避免装有面糊的烤盘碰到外面的烤盘,这样就不会太热。如果你的烤盘没有接逢,那可以不必包上锡箔纸,只需在烤盘底部放一块布来代替厨房纸巾即可。

    Hi, I would like to know if baking time was 150C one temperature in the receipe and the down temperature normally have to be added how many more as for mine oven is two temperature control and always headache on baking cheesecake or sponge cake. Most time out from oven either is shrink or crack. Sometimes before it remove from oven look so nice and rounded on top no crack but after remove from oven it shrink. Pls advise what cause the cake shrink if it is no crack and risen high? Tks.

      If your cake does shrink when out of oven, then your oven temperature is too hot. Try reducing baking temperature to 140°C or 130°C. The cake should rise slowly during baking to prevent it from over-rising then collapsing when out of oven.

    Would I get the same result if I used a springform pan instead of lining it with grease/parchment paper? I heard if you over grease the pan, it may not rise as well.

      Greasing just help the parchment paper to stick well to the pan, you don't have to grease the side of parchment paper which has contact with the batter..

    The cake taste great eventhough there is a slight shrinkage after taking out from the oven. However the bottom is a bit sticky. Why is that so? My pan do not have joining parts.Is the kitchen towel place in the water than place baking pan on top? Tq

      If your cake does shrink when out of oven, then your oven temperature is too hot. Try reducing baking temperature to 140°C. The cake should rise slowly during baking to prevent it from over-rising then collapsing when out of oven.
      Yes, if the mould doesn’t have joining parts, just put a piece of cloth in the water at the bottom of the baking pan with batter to replace the kitchen towels.
      Is your cake completely cooked? Do you cool your cake in the pan?

      @@MyKitchen101en I already lowered the temp to 140 degree and it's cooked- tested with skewer.I remove the baking sheet and cool the cake on the wire rack as soon it's out from the oven.

      How long have you baked the cake? I used to bake for 1 hr 30 minutes, the skewer is clean but when I cut the bottom part still have some wet part, it is not raw batter, but not completely cooked, therefor I increase baking time to 1 hr 50 mins.

      If you did not beat the egg whites till firm enough, part of the egg yolk batter will sink to the bottom

      You may try. Cream tartar/lemon juice helps to stabilize the meringue, preventing it from deflating fast.

      The size of pandan leaves vary, thus measure in gram is more accurate. 80 g of water is about 80 ml, 70 g of pandan juice is about 70 ml.

    I tried this receipt : it was high on the upper side, but flat from the bottom, so the cake was not as high, and the contours of the cake were too dry baked, I had to cut them.
    Why do the cake was flat ? I baked at 150 for the same time

      For cotton sponge cake, the oven temperature is crucial, since each oven works differently, the suggested temperature and time are just for reference, you may adjust the temperature according to your own oven. You need to bake it with water bath.
      If your cake does shrink when out of oven, then your oven temperature is too hot. Try reducing baking temperature to 140°C. The cake should rise slowly during baking to prevent it from over-rising then collapsing when out of oven.
      I have another oven which is hotter, I had to reduce to 130°C. Baking cotton sponge cake with very hot oven is more tricky and have to keep making adjustment and the result is still not very good.

      For cotton sponge cake, you need to bake in water bath so that it is not too hot. If it is too hot, the cake will rise too fast and too high, it will collapse when out of oven.

    Just wondering why the exterior of the baking pan needs to be wrapped in an aluminum foil since it is not a removable bottom pan.

      Some moulds have joining parts at the bottom that water may seep in, thus you need to line the outside of the baking pan with a thick layer of paper kitchen towels and wrap with 2 layers of aluminium foil. The paper kitchen towels can absorb any water accidentally seeps in. It can also prevent the baking pan with batter from contacting with the larger pan, so that it is not too hot. You don’t have to wrap with foil if the mould doesn’t have joining parts, just put a piece of cloth at the bottom of the baking pan with batter to replace the kitchen towels.

      For round pan you will need a 9-inch one, 9“ round pan is equivalent to 8" square pan. If you use 8” inch round pan, then reduce the ingredients, use only 75%.

      1. While in the oven my cake do rise slowly but when i take my cake out from the oven it shrink almost half of its height...do you think its due to under bake ? I bake 150'c for 1 hour 20 min

      This recipe? or others' recipe? Then it might be due to your meringue, your meringue might not well beaten. Drop the baking pan from onto countertop to minimise shrinkage once removing from oven, then you can unmould immediately.     thank you for this recipe it was delicious . I have a question my cake deflated (almost by half) after 1h30 (i did not open the over) and took it out after 1h50 as you said. It was still very fluffly though , i substituted cream tartar by lemon juice.

      The green colour is from pandan juice. With pandan fragrance, the egg smell is not strong.

      I tried the pandan cotton sponge cake again using 9”round tin. All fine except centre of the cake sunk a bit. Not sure why?

      Is it completely cooked through? If your cake does shrink when out of oven, then your oven temperature is too hot. Try reducing baking temperature to 140°C. The cake should rise slowly during baking to prevent it from over-rising then collapsing when out of oven.
