Former Royal Chef Reveals Queen Elizabeth's Favorite Homemade Dessert While Dishing On Royal Tea

- Darren McGrady was the personal chef to Queen Elizabeth II, Prince Philip, Princess Diana, Prince Charles, and Princes William and Harry-a family with notoriously specific food needs-for 15 years. In 1998, he moved to the U.S.A. where he wrote best-selling cookbooks and founded Eating Royally, a fine-dining catering service based in Dallas, TX.
Our adventures with former royal chef Darren McGrady have led to tons of revelations about our favorite British fam. We've learned that the Queen is a master of portion control who loves herself a good dose of chocolate every so often, for one. In fact, we wanted to know more about her, so we asked what other desserts she is into-it turns out the answer is "ones she can contribute to herself!"
Per Chef, the most senior of royals enjoys a stroll with her sister-Princess Margaret-through the grounds of the Balmoral estate every so often. The two of them enjoy hopping into the raspberry cages and picking a bunch of fruit (like, pounds and pounds of fruit) for the chefs to play with, primarily ahead of St. Georges Day, a celebration of knighthood the Queen presides over every year.

What I love about Royal British cuisine is that it's not overly complicated, anyone could make these things at home. It's really about preparing fresh, seasonal food in a simple but elegant way.

Indeed she is! I’m also a chocoholic, and I love every type of chocolate there is, but milk is my favorite by only a hair.

Speaking French is one of my favorite dishes. I think the Queen and I (and it seems you also, Penguin Lord - btw, my penguins send their regards. They’re all Emperor Pingus, but enjoy meeting all levels of pingu nobility. Napoleon says the Lord Penguins are the most fun to party with outside of the Emperors!) could happily share a meal of Speaking French together.

its more surprising than impressive really, shes the fucking queen, no one would expect a royal to do anything by themselves because we think of royalty as lazy fucks that dont run countries and live in luxuary
You need a land to grow a garden. It’s very naive of you to assume that “serving stuff from your own garden” is for the poor. Also, a garden/farm need A LOT of maintaining. Anyone who can grow their own garden, including royalty, has my respect.

I never knew how important providing for her own table was to the Queen. Charles seems to be continuing that with organic foods. Thinking back on history, hunts on the grounds were very important to the royals (and those invited) Providing a feast for your guests from the grounds goes back centuries. I just never realized the current Queen’s (and future King’s) desire to continue that long tradition. That is so much more fascinating than ordering caviar!

The Queen reminds me of my grandmother, in a way. My grandma was very fond of seasonal produce, and didn't like foods from outside of season because they never quite had the same taste.
I see why the Queen wanted to pass away at Balmoral. She has so many memories there and it's a beautiful place.

Here’s the recipe from his website
Framboises St Georges
1 quart fresh raspberries, divided
2 cups heavy cream
1/2 cup granulated sugar
1 teaspoon vanilla extract paste
Whipped cream
Puree half (2 cups) of the fresh raspberries to a pulp. Strain them through a fine sieve to remove all seeds. In a large bowl whip the heavy cream with the granulated sugar and vanilla extract until stiff. Without over beating, carefully fold the raspberry puree into the whipped cream mix and set aside.
In the rectangular serving dish arrange the remaining fresh raspberries side by side so as to make a large red cross in the dish. Lay another layer of raspberries on top. Divide the raspberry fool into the four corners of the dish taking care not to disturb the raspberry cross in the center. Using a spatula smooth the fool until each of the four quarters are flat.
Place additional whipped cream in a piping bag with a star tube. Highlight the whole raspberry cross by piping small rosettes of cream along each sides of the cross.

Darren McGrady isnt just the Royal Chef. He knows way much more about the historic background of some dishes than anyone else. And he also shares his happy memories with thenRoyal,family with us. Those glimpses behind the scenes are real treasures for me. Additionally this video beings back happy memories of berry days to me: with my mom as a child and later on with my own children. We looked the same mess. The kitchen was sticky and red spotted all over. But it was worth it to have home made jam for,the winter.
Oh who wouldn't love all that Wonderful fruit,and fresh plums! Oh my gosh love berries and plums, wow! The royals sure ate well! 👍

oof that's a total mood. There's nothing worse than sour berries in fall or winter. Not good for anything but making dry mead. Even then it would be really gross cause there's not enough sugar content.

We make something similar in the summer here in the US. It is decorated with cream and fresh berries in the shape of the American flag. Delicious and refreshing.

My first cousin,who dined regularly at the Palace ,so often we called him the Duke,he was in fact a Baronet,Sir Dickie Stickapopple the third,,his favourite dish was boiled Tripe n Onions with a dash of Dill,served with crusty fresh bread,, it all came to a crashing end when he made an overstated advance to the kitchen maid, he was escorted out the side entrance with a rather pointy scimitar prodding him in the arse,,he was never invited back,and was stripped of his rather junior title,,too right too

Such a beautiful dessert! I’m drooling just seeing it. I get how Queen Elizabeth feels about having dishes made from produce grown straight from the gardens. I like to use the raspberries grown from my garden in summer dishes. And the stories are amazing too! Now it makes me wonder what was Princess Margaret’s favorite dishes.

It would be nice to have all these his great stories written down to read. He’s so entertaining. When my son was young we would go picking strawberries in the summer. Late in strawberry season we would all have a strawberry fight in the fields & we would all be a mess.
