HOT WATER CORNBREAD | QUICK & EASY | SO CRISPY & DELICIOUS YOU’LL EAT THE WHOLE BATCH

- If you've never made Hot Water Cornbread, you don't know what you're missing. You've got to try, they are so easy to make! This is great with beans, greens, soup and just with butter! Try them out!
1 Cup Yellow Cornmeal
1/4 Cup Flour
1 Tsp
of Salt
Boiling Hot Water
1/2 Cup Canola /Vegetable Oil (or enough to fill the bottom of your skillet)
Mix first three ingredients in a bowl, add boiling water to cornmeal mixture and pour enough water to make the consistency thin enough to make patty or drop from spoon into grease. Fry in both sides until done and crispy. Enjoy with beans, greens, soup or whatever else you’d like.

I was born during the depression in 1934, you do the math, and this was a wonderful item I loved all my life. Mom taught school, for which she didn’t get paid for two years, and this was an everyday bread my early childhood. Free meal, eggs, milk, a chicken a week and mill ground flour. Thank you soo much for the memories!

All mac n cheese was baked back in the day and there wasn't a cheese sauce packet either. You had to make that from scratch in your gravy pan.
Must have been nice to have chicken too, the neckbones were our meat. Not complaining because I loved it and that's the way I cook it today. 🙂

I grew up with plain white stone ground meal, pinch of salt, boiling hot water, and cooked in bacon gold (grease). We ate with seafood and vegetables. I liked them with just butter on them. What memories! Makes me miss my Mama and Grandma😢 Appreciated all the good food I learned to prepare!!😊

Juanita, I grew up eating...but didn't pay attention to the recipe or the method. Nannie would cut the round into two discs butter it and hand it back to me and it was DIVINE. My mother SWEARS her mother didn't add flour. She said it was Martha White brand White corn meal. "mom are you sure it wasn't White Corn Meal Mix? (flour etc added)" No, it was JUST cornmeal. So I have tried and tried with just corn meal and it bombs everytime. If I add flour I get binding and it works. But it NEVER tastes like my nannies did. Juanita, can you vouch for my mom, for sure, it was JUST corn meal? Should I keep tryiing with just cornmeal? 🤔 Thank you!
@@b.walker5955 Your mother is correct. There was no flour, just stone ground corn meal, white, salt and really hot water. You added water until it was the consistency you need to make a small pancakes. Individual sizes. I’ll have to make some again and pay attention to the amounts. I use plain cornmeal all the time. I use yellow to make corn bread (yellow) that I am baking in the oven. Old School Cook

I just bought Bobs Red Mill organic corn flour for the cornbread in the oven, just as you cited. It is currently all I have. But WILL be on the look out for out for the white. I am sure most would say it doesn't matter, but the yellow is all I have tried and fail each time. Even if my cake is close to looking right, it doesn't taste the same. The inside should be creamy, dough like and the out side crunchy. The one element I can't duplicate is the fat. None meater here, can't use lard or bacon grease and choose to use Avocado oil. ~ this young whipper snapper likely can't get that OLD SCHOOL COOK nirvana you exist in, but I will do you proud by trying. THANKS AGAIN! Really grateful.
My mama made it with coarse ground white meal, a little salt and water, fried in oil. Wish l could find coarse ground white meal today. The old time grist mill where my mama grew up closed down a bunch of years ago. Miss the mill and the meal!

I’ve never had hot water cornbread but my mother and aunts and uncles love it. I’ve never seen them eat it with “food” but they do crumble it up in a glass with buttermilk and eat it that way.

We had that with syrup for dinner many times back home in NC. We didn't have much but we made due with what wr had and NEVER complained about eating the same thing because we were EATING. I miss my mother and the south. We used the butter flavored Crisco or lard

This is exactly how my Gramma taught me to make Johnnycakes, with one additional step: adding milk to make a pourable batter, which if you hit the sweet spot of consistency AND the perfect temperature of pan and melted butter (more like frying a pancake than a fritter), you would get a thin corn patty with brown, crunchy, lace edges. Our family's roots are on Block Island, RI - a tiny island, 3 miles by 7 miles - 13 miles off the southern Rhode Island coast. Even on this tiny island, there were vastly different Johnnycake recipes, I wonder if one of the others is more like this than my family's thin and lacy style. Anyway, this is fascinating, and I will DEFINITELY try this recipe!

Looks delicious. Grew up with this in Virginia. My family never called it hot water cornbread, just fried cornbread. I always preferred it to baked cornbred. Mom always preferred white cornmeal and would fix half this way, then add more water to the mix, so it would be thinner and spread out in the pan when fried. That was for me, because I preferred it thinner and crunchy. Now a plate of fried cabbage or collards and we be in business, yum!

Certainly one of the best meals from my grandmother. Ham, collards, beans, stewed tomatoes and of course cornbread. The only difference is she smashed them in the frying pan with a fork so you could see the fork marks in the top.

What if your corn meal is self rising,do u still gotta add the flour and baking soda to it...???
I make mine about the same but a few years back I started adding a wee bit of baking powder, it gives the interior a fluffier center like traditional cornbread and the outside is still crispy. I generally make mine with less water but think you have the right consistency, my family did not make hot water cornbread, so I had to learn on my own, thank you so much

And maybe wet the spoon with water so that the mixture does not stick to the 🥄 so much, otherwise, perfect...

I believe we inherited a version of this recipe from our African ancestors in Puerto Rico. They’re called surullos and the recipe is almost identical except we cook it on the stove and then we shape them into small cigar like shapes and then we fry them. Some people like a piece of cheese in the middle but I prefer them sweet. They’re so good.

Grew up poor in southern Ohio. Had a grist mill next town over, and cornmeal was affordable. My Great Granny made these daily for us, to keep us full, and fried them in lard or, if lucky, bacon grease. Bless your heart for the recipe and the memory.

This was perfect. I never knew how to prepare this delicious cornbread before. My mom and other elderly ladies served it quite often when I was younger. I was going to make me a few Pattie’s today but I will do mines tomorrow. It took me forever to learn how to make my own but I finally did it. Hot water cornbread is the best. But I also put two tablespoons of butter in it too.

Mmhhh, now that’s cornbread
Most places that offer cornbread is not really cornbread but a corn flavored cake.
This is one way here I also like to make up my batter and.bake it in my cast iron skillet sometimes add some fresh jalapeños peppers
My mom from NC made cornbread similar to this but instead of flour she put in 1 crumbled slice of stale bread and did add some milk after water. Would add water until just wet and then milk until like very thick cake batter. She used that same cornbread to make her cornbread dressing at Thanksgiving. All so good.

Yes, I noticed there was zero leavening in this recipe.
My grandmother lived her whole life in a small town in southern Alabama. When I was a kid (late 60s), she used to make these. We'd have them with fried chicken and lima beans or black eyed peas. Years later I was able to make them from memory but never had a recipe.
Hers were always from a coarse meal and usually white, maybe ground hominy. Crunchy on the outside and soft inside. Thanks for bringing back some great memories.

We call these corn fritters where I'm from, but its basically the same recipe. I don't add sugar but I do throw a dash of cayenne pepper in and then drizzle a little maple syrup or honey over top. So good.

Thanks for sharing this recipe. Both of my grandmothers made this and I loved it. I always thought it was something they learned during the Great Depression. They both had small children during that time and probably could not spare the egg and milk I usually use today.

I like your no nonsense approach to cooking, many measure everything which is fine but getting the right thickness to a batter is the most important thing. I didn't grow up with this in the North so much but some of my favorite food is just simple cooking! Thanks for sharing!
