Traditionally, we use tempe and tofu instead of meat so the dish always give a healthy, all-vegetables vibe. Based on my personal experience, the peanut sauce you make yourself with mortar and pestle (make it chunky) taste way better than commercial peanut butter in a jar.
Also, I'll recommend Rujak, Pecel, and Urap, the other less known Indonesian's traditional salad that also taste just as good.

Hi Marion, This is one of my favourite dish. But here in Indonesia we use crushed fried peanut and tamarind water instead of fish sauce so the peanut sauce have some crispy texture sensation when you bite it with the salad. Oh and also add the shrimp cracker and melinjo cracker for extra flavor. There also some boiled and raw vegetable but it has some variety depends on some region. Last, for the carbs sometimes it has "lontong" Made from boiled rice inside cylindrical shape banana leaves 👍Maybe its different from how Gado-gado was Made in my country but I really enjoy watch this video. Thank you Marion 🙏

Marion finally made her version of Gado2😀👍
    Gado2 n pecel both r javanese ppl salads👍
Gado2 original doesnt contain chicken/ any meat at all.
The peanut sauce is mixed up w coconut milk , thus the mild peanut flavor❤️❤️
Add some crispy fried shallots & melinjo chips to make it perfect , mild n perfect🤗💖
Meanwhile pecel only uses peanut sauce n usually mixed up w hot chilies. Tastes much harsher than gado2 , but perfect 4 chili lovers😸😱

If your keto can also include erythritol as a sweetener, it works well in many recipes. (I'm on a low-sugar diet). While this sweetener misses out on the caramel-y fragrance of palm sugar, a hint of sweetness just helps balance the spicy, sour, salty and umami seasonings in the peanut dressing.

Gado gado should have all the ingredients mixed together with the sauce, not eaten separately. Shouldn't have any meat in it except for the shrimp paste. Also, this is more like 'Karedok' which is the raw veg version of gado gado. Gado gado should have cooked/blanched veggies except cucumber. I know it's your version but sorry, it's not a good representation and rendition of what it should be. It's not good to call something gado gado when it is far off what it should be - I just do not want foodies new to this dish to find out it's not a nice version of what it should be.
