    Hi..I’m wondering if I can replace the butter with olive oil. Do you think it will work too?

      I believe it would. A lot of people make their choux pastry with olive oil. It just makes the donuts soft, which is not a bad thing :-)
      Make sure to add the flour as soon as the oil, water and milk start bubbling, so that it doesn't spray and burn you.
      If you do make them with oil, please let me know how they turn out.

    1- if i bake it on oven can i fill it by creram like choux Au craquelin ( cream puff ) ? also
    2- is taste like cream puff ? best thanks

      Thnak you for such kind words, Tami :-) If you bake them, yes you can fill them like a regular cream puff and it will taste like it :-) I personally prefer this recipe as a fried donut to get that honey cruller texture. If you do like working with choux pastry, maybe you can check out my cream puff recipe I posted today and give those a try! Let me know what you think if you try either recipe :-)

    I have been struggling to get the crust of the fried choux crunchy. Mine always come out soggy. Any advice?

      I know what you mean, it's not easy to keep it crunchy. But, just from experience I know that if I overcrowd the pan the dough steams instead of frying, so try frying only 3-4 donuts at a time, if you don't already. Also, increase your heat to 375 F and see if that helps. I hope it works you :-)
