    Good info here. I don’t have a Bronco, but I’ve cooked on plenty of drum smokers. You are right about keeping the exhaust damper wide open.
    Folks should thing of it this way; the intake damper is your accelerator, the gas pedal, the exhaust damper is your brakes. You should speed up with the intake, and gradually slow it down. However, if you need to stop quickly use the brake pedal. Try to do most of the control with the intake damper, the gas pedal.

      Thank you for watching. I have always been able to cook with the exhaust damper wide open. My Bronco responds well when adjusting the intake damper.

    Got one last week. Seasoned it the day before. Then smoked 16 racks of ribs 8 on the first cook and 8 on the second, all the same day. I didn’t use the heat diffuser plate thing because the ribs were long but I did wrap them in foil and hung them back up. Best ribs in a while. Pork butt next then a brisket

    I’ve got a Pit Barrel Cooker and get great results from it, but I like how the Bronco lets you easily dial in the temps with the intake and exhaust plates. I saw one at a local hardware store and it’s a SOLID chunk of metal! I want one (even though I don’t need it 😂).

      Not needing one is no reason not to get one. I upgraded my PBC to a Bronco. It’s a solid upgrade.

    Light one side of your lump coals for longer cook times. I’ve started using briquettes also to help with longer cooks. Good video

      Thank you for watching! I also light my charcoal on one side for longer cooks, but when I do cooks shorter than 6 hours, I will light the charcoal in the middle.

    Moe, I’m with you on liking the lump also but briquettes are my favorite for long burns on the Bronco. I love lump for the quick cooks like chicken and the flavor is great. Always appreciate your videos!

      Thank you for watching and appreciate the support. Lump in my bronco will burn hotter than briquettes. I agree on briquettes for long burns. So far Kingsford and b&b briquettes have given me the long burns. I want to try other brand charcoal briquettes.

      @@MoesBlackGoldBBQ Probably a dumb question.. Do you guys just add wood chunks throughout the charcoal basket? I'm used to offset smokers where I can add more over time.. I love the idea of longer cooks without adding, but wasn't 100% sure about how to incorporate wood with the charcoal. Thanks

      Thank you for watching! How these drum smokers are made are to add the wood chunks, either buried in the charcoal or place the wood chunks on the charcoal, then light your charcoal. But at any time, you can add wood chunks. These drum smokers are made to slowly burn your charcoal and wood chunks.i always place the wood chunks apart from each other in the basket. The charcoal slowly burns, getting to every wood chunk slowly.

    What’s the longest you smoked on it before adding more charcoal?

      20 hours using B&B charcoal briquets.

      @@MoesBlackGoldBBQ I’m contemplating on getting either this grill or the Kamala joe Acorn. Which grill do you recommend. Also when using charcoal, how do you avoid getting that dirty smoke do the smoke ain’t too strong.

    Good stuff Moe, had my Bronco for 3 yrs now LOVE IT, took a while to get myself dialed in on how to use it. This vid is perfect for someone that just bought one. I had done a 1/2 brisket flat side of it, came out good, just bought a full brisket will be trying this in a couple of weeks,....... hope I don't fck it up lol. Have you cooked a whole brisket on the Bronco? Keep the vids coming!

      I've had my Bronco for 3 years now. Best purchase I have ever made. Yes I have cooked brisket on my Bronco. I believe I have 4 videos of brisket cooks on my Bronco and 1 of those videos I hung the brisket. Let me know how the brisket cook goes. Faith in your ability to cook the brisket will help you.

    Do you ever have to add brickets or lump coal during long cooks like with briskets or big roasts.

      No I don't. The charcoal basket can hold 8 pounds of charcoal. I usually use Kingsford blue or B&B Charcoal Briquets for longer cooks of 12 plus hours.

    How do you clean your bronco? Mine has men making food taste like cigarette ash. Should I use a spray roam cleaner from Home Depot?

      I just scrape the entire Bronco and if I need to, I will spray inside the Bronco with a water hose. Then I reseason it.

    Hey Joe one question do you know if you can replace the gasket around the lid I ordered a new one but don’t know how to install you think you can help me it’s for the bronco

      The way to install the gasket is with the clips that come with the gasket. The clips go around the gasket, and they snap into the small inserts that are at the bottom of the lid.

    Any ideas of using a water pan?? I have used a propane/woodchip smoker with a water pan and I just got one of these and noticed no water pan? Should I use one or still same without? Any suggestions and ideas will help a lot! Thanks and happy grilling :)

      Thank you for watching. You can use a water pan, your choice, but this drum smoker can do with out one. It comes downs to your choice and how you cook.

    Great video, exactly what I was looking for… how long would you say that single charcoal tray of Band B will burn for?

      The B&B lump charcoal, I can't say, though I have used it before on short cooks. I've used the B&B charcoal Briquets, which I got 20 hours of cook time. Now I will say I gotta see how long a basket full of B&B lump will last.
