Jordan Marsh’s Blueberry Muffin Recipe!!!

1/2 cup softened butter
1 1/4 cups sugar
2 eggs
1 tsp of vanilla
2 cups of flour
1/2 tsp sea salt
2 tsp baking powder
1/2 cup milk
2 cups of blueberries, washed, drained, and picked over
3 tsp of sugar
Directions:
1. Preheat oven 375
2. Cream butter and 1 1/4 cups sugar until light
3. Add the eggs, one at a time, beating well after each addition. Add vanilla.
4. Sift together the flour, salt and baking powder, and add to the creamed mixture alternately with the milk.
5. Crush ½ cup blueberries with a fork, and mix into the batter. Fold in the remaining whole berries.
6. Line a 12 cup standard muffin tin with cupcake liners, and fill with batter. Sprinkle the 3 teaspoons sugar over the tops of the muffins, and bake at 375 degrees for about 30-35 minutes.
7. Remove muffins from tin and cool at least 30 minutes. Store, uncovered, or the muffins will be too moist the second day, if they last that long.

If you don’t want huge chunks of sour blueberry mix them longer. It will make the batter purple and that’s fine. I prefer mine without giant blueberries in them. Great recipe

Beautiful. This has to be the best looking mixture I've seen thus far. Butter left ot of a cake bake is seriously compromising flavour and texture. Usual metrics for muffins is oil??

Use raw cane sugar on top next time and it will be a far better result and experience. They look real good though.

How did u prevent your berries from bleeding cause I’ve done flour. An when I mix it just done turned my batter purple/blue
Usually a toss in flour does the trick but I was told to toss them in the actual dry ingredients of the recipe. Also make sure to gently fold in the blueberries with a spatula

Will they still come out big if you chose not to do the steps exactly the same like adding the eggs 1 by 1 also how big was the amount of batter you put in the muffin tray
Sorry for the late reply! Adding the eggs one by one just helps in the mixing process like slowly letting the ingredients get to know each other. I usually just use a 1/4 cup measuring cup to pour the muffin mix (just below full). Hope this helps!
