Idiot Proof Scallop Potatoes

What is going on my fellow Idiots! Welcome back for the weekend episode of Idiot Proof Cooking. Today we're making one of the best potato side dishes ever created- scallop potatoes. These are so easy to make- they really are idiot proof. They are creamy and cheesy and just overall delicious. Now I do put cheese in mine, which technically make these potatoes au gratin, however I grew up with cheese in my scallop potatoes so I'm sticking with calling them scallop potatoes.

- 8 medium sized yellow potatoes
- 1 large white onion diced
- 1/4 cup melted butter
- 1/4 cup all purpose flour
- 2 1/2 cups whole milk
- kosher salt
- black pepper
- 1 tbsp garlic powder
- 3 cups shredded mozzarella cheese
