You got a good idea going here.
We have legacy sites (100+ lol) hosted on out clients own servers and they don't keep the SSL certs up to date, would be great to have something like you are targeting to make to assist in this.
Nice clean list of sites and when their certs are expiring and have a few push notifications and email notifications and you are golden.

As I understand, your problem can be solved with simple Prometheus + ssl_exporter + Grafana(for alerts) combo without any coding.
