Thanks, I'm not too sure on the knife, it's some old blunt hunting knife that got given to me about 7 years ago, if you are looking for a good bait knife I can recommend the floating ones from burnsco as mine is pretty sharp and even good for filleting small fish, cheers.
You can eat Parore, they are called Luderick in Oz and they fish specifically for them. If you are going to eat them you must remove the black stomach lining from them first. They make good craypot bait too.

Fillet the Parore immediately. As the Aussies in this thread have said they are very nice to eat if you prepare them. They are a delicacy in regions where Snapper are plentiful so that should tell you a lot. My kids are very fussy eaters and Parore is their favorite fish. Some Aussies soak the fillets in milk, whatever, the key takeaway is that prepared right they are beautiful eating fish. Handled poorly they are disgusting to eat. Can I ask what rig you're using? Seems like it would be good for avoiding too many snags in estuaries!
I just used a simple ledger rig on my main rod and my dad straylined although he got a few snags.
Parore are not too bad smoked, nice video brother :)
