There weren't combines thousands of years ago or crop dusters or any number of technological advances. People spent their days growing/hunting/gathering/preserving their own food. Not a lot of people want to do that today. They are too busy watching Tiktoks. So Ag folks have to provide for them or they'll starve.

These salaries aren't great in USA
The majority of where these jobs exist are areas outside of big cities, where the cost of living is far lower. 50k/year in rural Iowa will get you farther than 90k/year in Los Angeles.
