scallops are hard to cook ..most people make them rubbery and I believe that is over cooked .. only one place near me can do it right
the one thing to remember when cooking with any fish or seafood is that 10secs is a lifetime....seriously. in a hot pan with oil, scallops are done in 35-40secs each side. thats it. butter,salt and pepper. perfect
Seems pretty easy to me. I cooked them a few years ago and they were sort of rubbery because I cooked them cold and they werent dried. I actually cooked some sea scallops just an hour ago with a ribeye and they were perfect. I didn't have oil, just butter and a non stick pan and chopped garlic. Just a minute and a half on 75% heat, flip and do another one minute. Put them on a paper towel and dry them and let them get to room temp, and of course salt and pepper and some source of garlic.

I used to catch and cook wild scallops. The natural ones are lil. Fuck the steroids
